Description

Veal stew, a classic of French cuisine, revisited for easy and quick preparation with the Thermomix®. This creamy and comforting dish is perfect for family meals or special occasions. The veal, tender and flavorful, is enhanced by a creamy and fragrant sauce. I love preparing this recipe, especially in autumn and winter, because it warms hearts and bodies. Served with rice, it's a delight! Feel free to add button mushrooms for an extra gourmet touch.

Ingredients (11 ingredients)

  • 1 bunch Parsley
  • 1 tbsp Thyme
  • 1 tbsp Bay leaf
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • 1 piece Clove
  • 1 piece Onion
  • 1 piece Carrot
  • 1 kg Veal in pieces
  • 30 g Flour
  • 30 g Butter

Preparation (8 steps)

Ingredient preparation

Prick the onion with the cloves and cut the carrot into slices. Set aside.

Cooking the meat

Put the pieces of veal in the Thermomix bowl. Add the pricked onion, carrot slices, parsley, thyme, bay leaf, salt and pepper. Cover with water.

Cooking the stew

Close the bowl and cook for 75 minutes/100°C/Level 1.

Sauce preparation

Remove 500 ml of broth from the stew and set aside. Empty the bowl and clean it.

Making the sauce

Put the butter in the bowl and melt for 3 minutes/50°C/Level 2.

Add the reserved broth and cook for 10 minutes/90°C/Level 2.

Drain the meat and put it on a dish. Pour the sauce over it and serve with rice or potatoes.
