Description

This braised red cabbage with apple, prepared in the Thermomix®, is a hearty and vegetarian side dish, ideal for the winter season or festive occasions. The main ingredients are red cabbage, apples and onions, refined with apple cider vinegar and sugar. Preparation takes a total of 75 minutes and yields 8 servings. The dish is ideal as a side dish to a main course or as part of a vegetarian menu.

  • 1000 g Red cabbage
  • 1 Stück Onion
  • 2 Stück Apples
  • 5 EL Clarified butter
  • 1 EL Sugar
  • 1 EL Apple cider vinegar
  • 250 ml Apple juice
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 Stück Bay leaves

Preparation (7 steps)

Prepare red cabbage

Wash red cabbage, remove the stalk and cut or shred into fine strips. Set aside.

Prepare onion and apples

Peel the onion and apples and cut into fine cubes. Set aside.

Put onion cubes in the mixing bowl and chop for 3 sec./level 5. Add clarified butter and sauté for 3 min./120°C/level 1.

Add apple cubes and sugar to the mixing bowl and sauté for 5 min./120°C/level 1.

Add red cabbage and apple cider vinegar to the mixing bowl and steam for 10 min./100°C/reverse rotation level 1.

Add apple juice, salt, pepper and bay leaves to the mixing bowl and steam for 35 min./100°C/reverse rotation level 1.

Remove bay leaves. Season the red cabbage with salt and pepper and serve.
