Description

These Vietnamese-style pork skewers are bursting with flavor! Marinated in a vibrant blend of lemongrass, chili, and fish sauce, the pork becomes incredibly tender and fragrant. I've been making these for years, and they're always a hit at barbecues. The dipping sauce, with its balance of sweet, sour, and spicy notes, elevates the dish to another level. Perfect for a summer gathering or a casual weeknight meal. The marinade time is crucial for maximum flavor, so plan accordingly! These are best served fresh off the grill.

Ingredients (16 ingredients)

  • 1 pound pork belly, cubed
  • 1 piece fresh red chile pepper, minced
  • 3 stalks lemongrass, minced
  • 3 tablespoons fish sauce
  • 3 clove garlic, minced
  • 1 teaspoon monosodium glutamate (MSG)
  • 1 teaspoon white sugar
  • 1 teaspoon Chinese five-spice powder
  • bamboo skewers
  • 0.25 cup fish sauce
  • 0.25 cup white sugar
  • 1 piece fresh red chile pepper, minced
  • 1 piece lime, juiced
  • 5 clove garlic, minced
  • 1 teaspoon monosodium glutamate (MSG)
  • 1 cup water

Prepare the marinade ingredients

Combine marinade ingredients

Add 1 pound pork belly (cubed), 3 tablespoons fish sauce, 1 teaspoon monosodium glutamate (MSG), 1 teaspoon white sugar, and 1 teaspoon Chinese five-spice powder to the mixing bowl. Mix well. Transfer to a bowl, cover with plastic wrap, and refrigerate for 1 to 3 hours.

Prepare the dipping sauce ingredients

Combine dipping sauce ingredients

Add ¼ cup fish sauce, ¼ cup white sugar, lime juice from 1 lime, and 1 teaspoon monosodium glutamate (MSG) to the mixing bowl. Mix well. Transfer to a bowl and let sit for 30 minutes to 1 hour. Pour in 1 cup water and stir.

Thread pork onto skewers

Thread the marinated pork belly onto bamboo skewers. This step does not require the Thermomix.

Grill the pork skewers

Preheat grill for high heat and lightly oil the grate. Cook pork skewers, turning occasionally, until crisp, 8 to 10 minutes. This step does not require the Thermomix.
