Description

These hare skewers in pita bread are a real highlight for any barbecue! The tender hare meat, wrapped in savory wild boar bacon, harmonizes perfectly with the fruity-sweet orange marinade. I like to make this recipe in the autumn when the game tastes particularly good. The preparation is a bit more elaborate, but the result is simply delicious. A great dish for anyone looking for something special and loves the taste of venison. The combination of meat, fresh spinach and tomatoes in warm pita bread is simply unbeatable!

2

Prepare hare meat

Debone the hare legs and remove as much silver skin as possible. Cut the meat into bite-sized pieces. Season with salt and a little sugar.

3

Assemble skewers

Wrap the pieces of meat with the bacon and put them on skewers.

4

Prepare onions

Peel the red onions and cut into rings.

5

Grill hare skewers

Grill the hare skewers over direct heat on the grill until crispy all around. Now brush with the marinade and cook for another eight to ten minutes over indirect heat. Cut the meat lengthwise from the skewer.

6

Warm up pita breads

Warm up the pita breads. This can be done in the oven or in a pan.

7

Fill pita breads

Halve the remaining cherry tomatoes and fill the flatbreads with the fresh spinach, onion rings, venison and one or two teaspoons of the marinade.
