Ingredients (11 ingredients)

  • 1 clove garlic
  • 2 tablespoon olive oil
  • 2 tablespoon plain yogurt
  • 0.25 cup sour cream
  • 0.5 cup thinly sliced sweet onion
  • 2 cup thinly sliced tomatoes
  • salt
  • freshly ground black pepper
  • 1 pinch cayenne pepper
  • 8 slice thick slices French bread
  • 1 tablespoon sliced fresh chives

Preparation (5 steps)

Garlic and Olive Oil Infusion

Add 1 clove of crushed garlic and 2 tablespoons of olive oil to a small bowl. Let it sit for about 60 minutes to infuse the oil with garlic flavor. No Thermomix settings are needed for this step.

Yogurt and Sour Cream Dressing

In a separate bowl, combine 2 tablespoons of plain yogurt and ¼ cup of sour cream until well combined. No Thermomix settings are needed for this step.

Preparing the Tomato Salad

Add ½ cup of thinly sliced sweet onion and 2 cups of thinly sliced tomatoes to the yogurt and sour cream mixture. Toss gently until the vegetables are well coated. Season with salt, freshly ground black pepper, and 1 pinch of cayenne pepper to taste. Wrap the bowl in plastic wrap and chill in the refrigerator until needed. No Thermomix settings are needed for this step.

Grilling the Bread

Preheat a charcoal grill until the coals are white and ashy. Grill 8 thick slices of French bread over hot charcoal, rotating as needed, until both sides are nicely toasted and slightly charred. No Thermomix settings are needed for this step.

Assembling the Bruschetta

Brush the grilled bread with the garlic olive oil. Use a slotted spoon to transfer the tomato salad over the top of each slice. Excess dressing can be spooned over if desired. Garnish with 1 tablespoon of sliced fresh chives and serve immediately. No Thermomix settings are needed for this step.
