Description

This colorful vegetable curry with chicken and rice is a delicious and filling main course. The dish is rich in vegetables and proteins and is ideal for a balanced diet. With the Thermomix®, preparation is quick and easy. The curry is designed for 4 servings and is prepared in about 45 minutes.

  • 250 g Rice
  • 250 g Onions
  • 40 g Oil
  • 2 Zehen Garlic
  • 10 g Ginger
  • 2 EL Curry paste
  • 150 g Carrots
  • 150 g Broccoli
  • 150 g Cauliflower
  • 150 g Snow peas
  • 1 Stück red bell pepper
  • 1 Stück yellow bell pepper
  • 400 ml Coconut milk
  • 2 EL Soy sauce
  • 1 TL Curry powder
  • 0.5 TL Turmeric
  • 0.5 TL Cumin
  • 0.5 TL Coriander
  • 0.25 TL Chili powder
  • 0.5 TL Salt
  • 0.25 TL Pepper
  • 300 g Chicken breast fillet
  • 1 TL Salt

Preparation (9 steps)

Cook rice

Add 1 tsp salt and 1 liter water to the mixing bowl and bring to the boil for 10 min./100°C/level 1. Add 250g rice to the simmering basket, insert and cook for 20 min./100°C/level 4. Remove the simmering basket with the spatula and keep the rice warm.

Chop onions

Put 250g onions in the mixing bowl and chop for 3 sec./level 5.

Sauté onions

Add 40g oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add garlic and ginger

Add 2 cloves of garlic and 10g of ginger to the mixing bowl and chop for 3 sec./level 7.

Add 2 tbsp curry paste and sauté with the remaining ingredients for 2 min./120°C/level 1.

Add 150g carrots, 150g broccoli, 150g cauliflower, 150g snow peas, 1 red bell pepper and 1 yellow bell pepper in bite-sized pieces to the mixing bowl and chop for 5 sec./level 4.

Add 400ml coconut milk, 2 tbsp soy sauce, 1 tsp curry powder, 1/2 tsp turmeric, 1/2 tsp cumin, 1/2 tsp coriander, 1/4 tsp chili powder, 1/2 tsp salt and 1/4 tsp pepper to the mixing bowl and simmer for 15 min./100°C/reverse rotation level 1.

Add chicken

Add 300g chicken breast fillet, fried in a separate pan, to the mixing bowl and heat for 5 min./100°C/reverse rotation level 1.

Season the curry with salt, pepper and possibly some chili powder. Serve with rice.
