Description

This jungle curry is a hearty main course with Asian influences. Chicken breast fillet, various vegetables and coconut milk are processed with curry paste and spices into a spicy curry dish. Preparation in the Thermomix® takes about 45 minutes and is enough for 4 servings. Ideal for lovers of Asian cuisine.

Ingredients (21 ingredients)

  • 250 g Onions
  • 2 Stück Cloves garlic
  • 40 g Oil
  • 1 Stange Leek
  • 1 Stück red Pepper
  • 1 Stück yellow Pepper
  • 1 Stück green Pepper
  • 285 g Corn (drained weight)
  • 240 g Mushrooms (drained weight)
  • 1 Stange Celery stalks
  • 100 g Sugar snap peas
  • 2 EL Curry paste
  • 400 ml Coconut milk
  • 1 EL Soy sauce
  • 1 EL Fish sauce
  • 1 TL Curry powder
  • 1 TL Sambal Oelek
  • 1 TL Lemon juice
  • Salt
  • Pepper
  • 500 g Chicken breast fillet

Preparation (7 steps)

Chop onions and garlic

Put 250 g onions into the mixing bowl and chop for 3 sec./level 5. Then add 2 cloves of garlic and chop for 3 sec./level 7.

Sauté onions and garlic

Add 40 g oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/level 1.

Prepare and chop vegetables

Clean, wash and cut 1 leek, 1 red pepper, 1 yellow pepper, 1 green pepper, 1 can of corn (drained weight 285 g), 1 can of mushrooms (drained weight 240 g), 1 stalk of celery and 100 g of sugar snap peas into coarse pieces. Put the prepared vegetables into the mixing bowl and chop for 5 sec./level 4.

Add and sauté curry paste

Add 2 tbsp curry paste to the vegetables in the mixing bowl and sauté for 2 min./120°C/level 1.

Add liquids and spices

Add 400 ml coconut milk, 1 tbsp soy sauce, 1 tbsp fish sauce, 1 tsp curry powder, 1 tsp sambal oelek, 1 tsp lemon juice, salt and pepper to taste to the mixing bowl and cook for 15 min./100°C/level 1.

Fry meat

Cut 500 g chicken breast fillet into bite-sized pieces. Fry the meat in a separate pan with some oil until cooked.

Add meat to curry and finish

Add the fried chicken breast fillet to the curry in the mixing bowl and heat for 5 min./100°C/reverse level 1. Serve with rice.
