Description

This beef stew à la bourguignonne is a comforting and flavorful dish, perfect for autumn and winter evenings. I often prepare it for family meals, as it is always very popular. The beef, slowly simmered in a rich and fragrant red wine broth, becomes incredibly tender. The smoked bacon adds a touch of indulgence, while the Paris mushrooms, onions and garlic add a depth of flavor. Accompanied by steamed carrots and potatoes, this dish is a real treat. The preparation takes a little time, but the result is really worth it! An ideal dish for special occasions or simply to treat yourself.

Ingredients (17 ingredients)

  • 1 tbsp very full cornstarch
  • 6 tbsp chopped parsley
  • 200 g paris mushrooms
  • 1 bouquet bouquet garni
  • 3 pinch coarse salt
  • 4 piece carrot
  • 4 piece potatoes
  • black pepper
  • 1 morceau sugar
  • 1 tbsp tomato concentrate
  • 35 cl beef stock
  • 1 barquette smoked bacon
  • 10 cl red wine
  • 3 piece red onions
  • 2 piece tomatoes
  • 2 clove garlic
  • 600 g beef for bourguignon

Preparation of onions and garlic

Peel and cut the red onions in half. Put the onions in the Thermomix bowl and chop 3 Sec./Stufe 5. Remove and set aside. Peel the garlic cloves, remove the germ and chop finely. Set aside with the onions.

Brown the meat

Cut the beef into cubes of about 5 cm on each side. Heat a pan and brown the meat cubes for 5 to 10 minutes until golden brown. Set aside the meat.

Degrease the bacon

In the same pan, fry the smoked bacon to degrease them. Set aside the bacon.

Cooking the mushrooms

In the bacon fat, sauté the sliced Paris mushrooms. Set aside with the onions and garlic.

Broth preparation

In the Thermomix bowl, pour 350 ml of boiling water and add the beef stock cube. Mix 10 Sek./Stufe 3 to dissolve the broth.

Assembly and cooking

In the Thermomix bowl, add the meat, bacon, cornstarch, beef stock, red wine, tomato concentrate, quartered tomatoes, chopped parsley, coarse salt, black pepper and the piece of sugar. Add the bouquet garni. Cook 120 Min./100°C/Stufe 1/Linkslauf.

Adding the vegetables

30 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the mushrooms, onions and garlic to the Thermomix bowl. Remove the bouquet garni. Cook 30 Min./100°C/Stufe 1/Linkslauf. If desired, add the steamed carrots and potatoes during the last 15 minutes of cooking.
