Description

This Sinaloa style beef broth is a comforting and flavorful dish, perfect for cold days or for celebrating with family. The meat is cooked slowly in a rich and aromatic broth, with roasted tomatoes, fresh cilantro and a touch of crispy bacon. I have been preparing it for years and it is always a success. The key is to roast the tomatoes well to intensify their flavor. It is ideal to serve with quesadillas, radishes and grilled spring onions. A true delight that will transport you to Sinaloa with every spoonful! Also, it is a very complete and nutritious recipe.

Ingredients (7 ingredients)

  • 2 kilogramos Tender roast beef
  • 8 piece Tomatoes
  • 1 bunch Cilantro
  • 150 gramos Bacon
  • 1 piece Medium onion
  • 2 cube Broth
  • 1 pinch Salt

Preparation (9 steps)

Chop the onion and bacon

Thermomix® Setting

Place 1 medium onion in the glass and chop for 3 seconds at speed 5. Remove and reserve. Place 150 grams of bacon in the glass and chop for 3 seconds at speed 5. Remove and reserve.

Fry the bacon and onion

In a frying pan, fry the chopped bacon until it is golden brown and crispy. Add the chopped onion and fry until transparent. Remove from the pan and reserve.

Fry the meat

In the same pan where the bacon and onion were fried, fry 2 kilograms of meat cut into thin strips until golden brown. Remove from the pan and reserve.

Roast the tomatoes

Roast 8 tomatoes until they are well roasted. Remove from heat and reserve.

Blend the roasted tomatoes

Thermomix® Setting

Place the roasted tomatoes, a piece of onion, 1 bunch of cilantro and 2 broth cubes in the glass. Blend for 30 seconds at speed 10.

Strain the sauce

Strain the blended tomato sauce to remove the seeds and skin. Reserve.

Cook the meat in the sauce

Thermomix® Setting
60 min/212°F/Speed 2 100

Place the fried meat, fried bacon and onion in the glass. Add the strained tomato sauce and water or beef broth to cover the meat. Cook for 60 minutes at 100°C at speed 2.

Add the beans

Thermomix® Setting
10 min/212°F/Speed 2 100

Add cooked whole beans with a little broth from the same beans to the glass. Cook for 10 minutes at 100°C at speed 2.

Serve

Serve hot, garnished with chopped cilantro. Accompany with quesadillas, radishes and grilled spring onions.
