These cannelloni stuffed with chicken and mozzarella are a comforting and tasty dish, perfect for a meal with family or friends. I have been preparing this recipe for years and it is always a hit. The chicken, combined with the sweetness of the mozzarella and the richness of the homemade tomato sauce, creates an irresistible harmony of flavors. The preparation is a bit long, but the result is really worth it. Feel free to prepare the tomato sauce in advance to save time. It is an ideal dish for lovers of Italian cuisine and au gratin dishes. A real delight!

Ingredients (14 ingredients)

  • 2 piece Chicken breast(s)
  • 125 g Mozzarella
  • 2 piece Egg(s)
  • 4 slice Smoked bacon
  • 3 piece Tomato(es)
  • 4 feuille Lasagne sheet(s)
  • 1 piece Onion(s)
  • 1 clove Garlic
  • 1 tbsp Sugar
  • to taste Grated parmesan
  • to taste Thyme
  • to taste Olive oil
  • to taste Salt
  • to taste Pepper

Preparation (14 steps)

Preheat the oven

Preheat your oven to 200°C (th. 6-7).

Chop the onion

Cut the onion into pieces. Put the onion in the bowl and chop 3 sec./Stufe 5.

Brown the onion

Add a little olive oil to the bowl with the chopped onion and brown 3 Min./120°C/Stufe 1.

Prepare the tomatoes

Rinse the tomatoes, pat them dry, cut them, remove the seeds, then cut them into small dice.

Chop the garlic

Peel the garlic clove and put it in the bowl. Chop the garlic 3 Sek./Stufe 7.

Cook the tomato sauce

Then incorporate the diced tomatoes, the chopped garlic as well as the sugar to the previous preparation in the bowl, then let simmer 20 Min./100°C/Stufe 1.

Mix the tomato sauce (optional)

Thermomix® Setting
30 sec/Speed 8

If you want a smoother sauce, mix the preparation 30 Sek./Stufe 8 at the end of cooking, then set aside.

Cook the lasagne sheets

Bring salted water with 1 tbsp of olive oil to a boil in a saucepan, and add the lasagne sheets. Cook for 5 minutes, then remove them and set them aside on a clean towel to cool. Once cooled, cut them in half.

Season the chicken

Then sprinkle the chicken breasts with a drizzle of olive oil, season with salt and pepper, and then add the thyme.

Bake the chicken in the oven

Bake the chicken breasts, and cook for 15 minutes.

Prepare the stuffing

In a bowl, break the 2 remaining eggs. Cut the mozzarella and chicken into dice, mix them with the 2 eggs.

Assemble the cannelloni

Then place in each lasagne square, half a slice of smoked bacon, and a little of the chicken-mozzarella preparation, then close.

Arrange the cannelloni in the dish

Cover the bottom of a dish with tomato sauce, then put the cannelloni in it.

Gratin the cannelloni

Pour the tomato sauce over it and add the grated parmesan. Finally, put in the oven, and let cook again at 200°C (th.6-7) for about 25 minutes.
