Description

These caramelized crackers are an absolute highlight for every sweet tooth! The combination of salty cracker, sweet caramel and bittersweet chocolate is simply irresistible. I especially like to make them during the Christmas season, but of course they taste good all year round. The preparation is super easy and quick with the Thermomix®. A great recipe to spoil friends and family or as a small gift. If you like, you can use other nuts or sprinkles instead of hazelnut brittle. Enjoy!

Ingredients (8 ingredients)

  • 200 g brown cane sugar
  • 250 g Butter
  • 0.5 tsp Salt
  • 1.5 Pck. Salt crackers
  • 400 g Bittersweet couverture
  • 25 g Coconut oil
  • 1 tsp Vanilla flavoring
  • 50 g Hazelnut brittle

Preparation (6 steps)

Caramelize sugar

Thermomix® Setting
8 min/248°F/Speed 1 120

Put the cane sugar into the mixing bowl and grind for 10 sec./speed 1. Then let it caramelize for 8 min./120°C/speed 1 without the measuring cup. Observe the sugar and adjust the time if necessary until it is golden brown.

Complete caramel

Thermomix® Setting
3 min/122°F/Speed 2 50

Add the butter and salt to the caramelized sugar in the mixing bowl and stir for 3 min./50°C/speed 2 until a homogeneous mass is formed. Use the spatula to scrape down from the edge.

Cover crackers

Line a baking sheet with baking paper and fold up the paper at the edges. Spread the salt crackers close together on the baking paper. Pour the caramel evenly over the crackers.

Melt chocolate

Thermomix® Setting
4 min/122°F/Speed 2 50

Break the bittersweet couverture into pieces and put it in the mixing bowl together with the coconut oil and vanilla flavoring. Melt for 4 min./50°C/speed 2. Use the spatula to scrape down from the edge and extend the time if necessary until the chocolate has completely melted.

Distribute and decorate chocolate

Spread the melted chocolate evenly on the caramel. Sprinkle with hazelnut brittle as desired.

Cool and serve

Place the tray in the refrigerator for at least 1 hour until the chocolate has hardened. Then cut or break into pieces and pack airtight.
