Description

This peasant cassoulet is a comforting and flavorful dish, perfect for autumn and winter evenings. I love preparing this dish because it is both simple and generous. The white beans, melting and creamy, go wonderfully with the meat and potatoes. The garlic sausage adds a touch of character, while the smoked bacon adds a gourmet note. This cassoulet is ideal for a friendly meal with family or friends. It is hearty and warms the heart, especially after a long day. Ingredients (14 ingredients)

  • to taste Lingot or mogette bean
  • 1 piece pork tenderloin
  • 4 slice bacon
  • 1 piece garlic sausage
  • 8 piece Strasbourg sausages
  • to taste Sodium bicarbonate
  • to taste Margarine
  • 3 piece cloves
  • 1 piece onion
  • 0.5 carré sugar
  • 2 tbsp tomato concentrate
  • 3 piece medium-sized potatoes
  • to taste Salt or fine salt
  • to taste Pepper

Preparation (10 steps)

Preparing the beans

The day before, put the lingot or mogette beans in a large volume of water and soak overnight.

Preparing the potatoes

Peel the potatoes and cut them into pieces.

Preparing the onion

Peel the onion and stick the three cloves into it.

Cooking the meat

In a pan, melt a piece of margarine and brown the pork tenderloin for 4 to 5 minutes on all sides. Remove the meat from the pan and set aside.

Preparing the cassoulet

Drain the white beans and put them in the Thermomix bowl. Add the two tomato concentrates, the potatoes, the salt, the pepper, a pinch of sodium bicarbonate and the half square of sugar.

Mixing the ingredients

Add water to the Thermomix bowl until the ingredients are covered. Mix gently with the spatula.

Pressure cooking

Thermomix® Setting
10 min/248°F/Speed 1 120

Close the Thermomix bowl and cook under pressure for 10 minutes at 120°C, Stufe 1. Check during cooking that there is always enough water.

Adding the meats

Decompress the Thermomix. Add the Strasbourg sausages cut in half, the reserved pork tenderloin, a few slices of garlic sausage and the bacon cut into pieces.

Final cooking

Thermomix® Setting
15-20 min/212°F/Speed 1/Linkslauf 100 Reverse

Close the Thermomix bowl and cook for 15 to 20 minutes at 100°C, Stufe 1, Linkslauf. Mix from time to time with the spatula.

Check the cooking of the beans and potatoes. Serve hot.
