Description

I love to cook with seasonal ingredients, and these stuffed red onions are a real highlight in the fall! The sweetness of the onions harmonizes wonderfully with the dried apricots and cranberries, while ginger and fresh herbs add a spicy note. Preparing it in the Thermomix® makes it super easy to mix the filling perfectly. Ideal as a vegetarian appetizer or side dish to a festive meal. The onions can be prepared well in advance and are a real eye-catcher on the table. Simply tastes delicious!

Ingredients (14 ingredients)

  • 8 piece red onions
  • 1 pinch Salt
  • 30 g dried apricots
  • 2 cm Ginger
  • 2 clove Garlic
  • 4 Stiele Sage
  • 4 Zweige Rosemary
  • 4 Stiele Thyme
  • 2 piece Eggs (Size M)
  • 100 g Breadcrumbs
  • 30 g dried Cranberries
  • 1 pinch Pepper
  • 3 tbsp Olive oil
  • 1 etwas Fat for the tray

Preparation (5 steps)

Prepare onions

Peel 8 red onions and cut off about 1 cm from the top end. Straighten the root side so that the onions can stand. Place the onions in a pot and cover with salt water. Place the pot on the stove and cook the onions for about 5 minutes. Then drain, drain and let cool slightly. Use a melon baller to hollow out the onions, leaving the 3 outer layers.

Chop apricots, ginger and garlic

Put 30 g dried apricots, 1 piece (approx. 2 cm) ginger and 2 cloves of garlic into the mixing bowl and chop for 5 sec./speed 5. Push down with the spatula.

Add herbs and mix

Put 4 sprigs of sage, 4 sprigs of rosemary and 4 sprigs of thyme in the mixing bowl and chop for 3 sec./speed 4. Push down with the spatula.

Prepare filling

Add 2 eggs (size M), 100 g breadcrumbs, 30 g dried cranberries, salt and pepper to the chopped ingredients in the mixing bowl and stir for 20 sec./speed 3.

Fill and bake onions

Place the onions with the openings facing up in the greased hollows of a muffin tin. Fill the onions with the mixture. Brush all around with 3 tablespoons of olive oil and cook in a preheated oven (electric oven: 200°C/convection oven: 180°C) for approx. 20 minutes. Remove the tray from the oven and arrange the onions on a plate.
