Description

This recipe for cheese buns (Pao de Queijo) is a Brazilian specialty that is prepared gluten-free. Preparation takes about 45 minutes and is of medium difficulty. Ideally suited as finger food or for breakfast.

  • 6 piece Eggs (large)
  • 500 ml Corn germ oil
  • 1 Suppenlöffel Salt
  • 175 g Parmesan (grated)
  • 125 g Mozzarella (grated)
  • 500 ml Milk (3.5% fat)
  • 125 g Povilho Azedo (Cassava starch)
  • 750 g Povilho Doce (Cassava starch)

Whisk eggs, oil and milk until frothy

Put 6 eggs, 500 ml corn germ oil and 500 ml milk into the mixing bowl and stir for 30 sec./speed 4.

Add cheese and Povilho Azedo

Add 175 g grated Parmesan, 125 g grated Mozzarella and 125 g Povilho Azedo to the mixing bowl and stir for 20 sec./speed 3.

Add 750 g Povilho Doce spoonful by spoonful to the mixing bowl and stir for 30 sec./speed 3.

Let dough rest

Let the dough rest in the refrigerator for at least 30 minutes.

Mix dough

Thermomix® Setting
20 sec/Speed 3

Mix the dough well in the mixing bowl for 20 sec./speed 3 until the cheese has dissolved well.

Baking

Place the dough in a muffin tin and bake in the oven at 160 °C for about 20 to 25 minutes until golden brown.
