3

Press cookie mixture into springform pan

Firmly press the cookie mixture onto the bottom of the prepared springform pan (20 cm diameter). Smooth the surface with the back of a spoon. Place the pan in the refrigerator while preparing the filling.

4

Reduce orange juice

Place 360 ml orange juice in a small saucepan and simmer gently over medium heat. Reduce the juice for 10-20 minutes until about 120 ml remain.

5

Add sugar

Add 50 g sugar to the reduced orange juice and stir until dissolved. Remove from heat and let cool.

6

Mix cream cheese and yogurt

Place 400 g cream cheese and 300 g Greek-style yogurt in a large bowl and beat with a hand mixer for 2-3 minutes until smooth and fluffy.

7

Stir in cocoa powder and orange zest

Stir 20 g cocoa powder unsweetened and 1 tsp freshly grated orange zest into the cream cheese-yogurt mixture.

8

Add melted chocolate and orange reduction

Melt 300 g dark chocolate. Alternately add the melted chocolate and orange reduction to the cream cheese-yogurt mixture in three portions each. Stir thoroughly after each addition to ensure everything is evenly combined with the cream cheese mixture. Repeat this process until everything is incorporated.

9

Fill cream into the springform pan

Fill the cream into the prepared springform pan with the cookie base and smooth it out.

10

Cool cake

Refrigerate the cake for at least 4 hours or overnight to firm up.

11

Prepare ganache

Coarsely chop 150 g dark chocolate for the ganache and place in a heatproof bowl.

12

Heat cream

Heat 120 ml cream in a small saucepan until hot but not boiling. Pour the hot cream over the chopped chocolate. Let the mixture stand for 2 minutes and then slowly stir until a shiny, homogeneous cream forms.

13

Let ganache cool

Let the ganache cool for a few minutes until it thickens slightly but remains easy to pour.

14

Spread ganache on cheesecake

Pour the ganache onto the chilled cheesecake. Carefully spread with a palette knife or by gently rotating the cake so that it runs evenly to the edge.

15

Cool cake again

Refrigerate the cake again for about 1 hour to allow the chocolate ganache to set.

16

Garnish

Garnish the finished chocolate cheesecake with orange slices.
