These Chicken and Pepper Rice Paper Rolls are a delightful and refreshing appetizer or light meal, perfect for a warm day. I've been making these for years, and they're always a hit! The crisp rice paper wrappers encase a flavorful filling of tender chicken, crunchy red bell pepper, and fresh romaine lettuce, all tossed in a creamy salad dressing. They're quick to assemble and require no cooking, making them ideal for a light lunch or a picnic. Feel free to add other veggies like cucumber or carrots for extra crunch. These rolls are a healthy and delicious way to enjoy a light and satisfying meal.

Ingredients (5 ingredients)

  • 12 piece rice wrappers
  • 5 ounce baby romaine lettuce leaves
  • 1 piece cooked boneless chicken breast half, sliced into thin strips
  • 1 piece red bell pepper, sliced
  • 0.5 cup salad dressing

Preparation (10 steps)

Prepare Rice Paper Wrappers

Fill a large bowl with room-temperature water. This step does not require the Thermomix.

Soften Rice Paper

Soak 1 rice wrapper in the water until it bends easily, about 15 seconds. This step does not require the Thermomix.

Assemble Spring Rolls

Lay the softened rice wrapper flat on a clean surface. This step does not require the Thermomix.

Add Lettuce

Place a small handful of baby romaine lettuce leaves in a row across the center of the rice paper. This step does not require the Thermomix.

Add Chicken

Add a few strips of cooked boneless chicken breast, sliced into thin strips, on top of the lettuce. This step does not require the Thermomix.

Add Red Bell Pepper

Add a few slices of red bell pepper on top of the chicken. This step does not require the Thermomix.

Fold and Roll

Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. This step does not require the Thermomix.

Repeat

Repeat steps 2-7 with remaining rice wrappers and ingredients. This step does not require the Thermomix.

Prepare Caesar Dressing

If you want to make your own Caesar dressing, add all dressing ingredients to the mixing bowl and mix for 20 Sec./Stufe 4.

Serve

Cut the spring rolls in half and serve with salad dressing for dipping. This step does not require the Thermomix.
