Description

This chicken in almond sauce Mexican style is a dish that evokes memories of family celebrations. The combination of golden chicken with the creamy sauce of almonds, tomato and spices is simply delicious. The recipe, although it requires a little time, is quite simple and the final result is worth it. Ideal for a special meal or a comforting dinner, this dish is perfect to share with friends and family. It can be accompanied with white rice or a fresh salad. A feast of flavors that will transport you to Mexico!

Ingredients (9 ingredients)

  • 8 piece Chicken pieces
  • 0.5 pieza Onion
  • 1 clove Garlic
  • 6 pieza Red tomato
  • 1.5 tazas Flaked almond
  • 1 pinch Cumin
  • 5 hojas Bay leaf
  • 1 pinch Salt
  • 1 cucharada sopera Chicken consommé powder

Preparation (5 steps)

Cook the tomatoes

Place the red tomatoes in a saucepan with boiling water and cook for 5 minutes over high heat. Once cooked, set aside.

Fry the chicken

In a frying pan with hot oil, fry the chicken pieces until golden brown. Remove from heat and set aside.

Brown the almonds

In the same pan and with the same oil, brown the flaked almonds. Remove and set aside.

Prepare the sauce

Thermomix® Setting
30 sec/Speed 10

Place the cooked tomatoes, browned almonds, garlic, cumin, salt and chicken consommé powder in the Thermomix bowl. Crush 30 sec./Stufe 10 until a homogeneous sauce is obtained.

Cook the chicken in sauce

Place the fried chicken in a pan. Pour the almond sauce over the chicken. Add the bay leaves and the sliced onion. Cover the pan and cook over low heat for 10 minutes.
