Description

These chicken paupiettes with ham and Gruyere are a comforting and tasty dish, perfect for a family meal. I have been making this recipe for years and it is always a success. The chicken is tender and juicy, the ham adds a salty touch and the Gruyere melts perfectly to create a creamy sauce. It is an ideal dish for cool autumn or winter days, served with fresh pasta. You can easily prepare the paupiettes in advance and reheat them just before serving. A real delight!

Ingredients (9 ingredients)

  • 4 piece Chicken breast(s)
  • 6 slice Ham
  • 250 g Grated Gruyere
  • 1 piece Onion(s)
  • 1 pinch Nutmeg
  • 250 ml Milk
  • 50 g Butter
  • to taste Salt
  • to taste Pepper

Cook chicken

Put the chicken breasts in the Thermomix bowl. Add water until they are covered, then add salt and pepper. Cook 25 Min./100°C/Stufe 1.

Chop and sauté onion

Drain the chicken breasts and set aside. Put the onion in the Thermomix bowl and chop 3 Sek./Stufe 5. Add the butter and sauté 3 Min./120°C/Stufe 1.

Preparation of paupiettes

Cut the chicken breasts into thick slices. Take a slice of ham, put a little grated cheese, then a slice of chicken. Roll everything up and secure with kitchen twine.

Sauté the paupiettes

Add the paupiettes to the Thermomix bowl with the onions and butter. Sauté 5 Min./120°C/Linkslauf Stufe 1.

Preparation of the sauce

Remove the paupiettes and set aside. Pour the milk into the Thermomix bowl. Add salt, pepper and a pinch of nutmeg. Cook 5 Min./90°C/Stufe 2.

Bind the sauce and add the cheese

Add a little grated cheese to the sauce and mix 1 Min./60°C/Stufe 3.

Finalize and serve

2 min/140°F/Linkslauf Speed 1 60 Reverse

Put the paupiettes back in the sauce and heat 2 Min./60°C/Linkslauf Stufe 1. Serve hot with pasta.
