Description

These Thai chicken skewers are an explosion of exotic flavors! Juicy pineapple and tender chicken, marinated in a fragrant blend of coconut milk, ginger, lemongrass and coriander, make it an irresistible dish. I often prepare them for summer barbecues, and they always disappear in the blink of an eye. The coconut milk marinade brings a subtle sweetness that goes perfectly with the spices. An easy to prepare dish, perfect for impressing your guests or simply for a tasty family dinner. Feel free to add a little chilli to enhance the taste!

Ingredients (10 ingredients)

  • 400 c. à soupe Chicken breast(s)
  • 200 tranche(s) Pineapple
  • 2 piece Lime(s)
  • 4 cl Lime(s) juice
  • 10 noix Coconut milk
  • 50 g Ginger
  • 30 g Lemongrass
  • 3 tiges Coriander
  • 50 g Onion(s)
  • 2 c. à soupe Sesame

Ingredient preparation

Cut the chicken breasts into long strips a few millimeters thick. Cut the lime into thin slices. Peel the ginger.

Chop the ginger, lemongrass and coriander

Put the ginger (50 g), lemongrass (30 g) and coriander (3 sprigs) in the Thermomix bowl and chop 5 Sek./Stufe 5.

Marinade preparation

In a dish with high edges, place the chopped ginger, lemongrass, coriander, onion (50 g) and lime juice (4 cl) then mix with coconut milk (10 walnuts). Salt and pepper.

Skewer assembly

Wrap the chicken strips around the pineapple pieces, then prick them on a wooden stick alternating with lime slices folded in four.

Skewer marinade

Marinate for at least one hour in the coconut milk preparation.

Skewer cooking

Remove the skewers from the marinade. Cook them for 10 min on the barbecue, turning them every 3 min (if not, cook them in the oven).

Service

Serve with a few sesame seeds (2 tablespoons) and a little of the marinade juice.

These Thai chicken and pineapple skewers are a dish I discovered during a trip to Thailand a few years ago. I was fascinated by the way sweet, salty, sour and spicy flavors balanced perfectly in Thai cuisine. I tried to recreate this authentic taste at home, and after several attempts, I found the perfect recipe, adapted to the use of the Thermomix®. The secret of these skewers lies in the marinade. Coconut milk brings a smoothness and subtle sweetness that contrasts beautifully with the acidity of lime juice and the freshness of coriander. Ginger and lemongrass, finely chopped thanks to the Thermomix®, diffuse their powerful and characteristic aromas. Pineapple, meanwhile, adds a juicy and sweet touch that caramelizes slightly when cooked, creating an irresistible texture. The chicken, cut into thin strips, soaks up all these flavors during the marinade, becoming incredibly tender and tasty. For the preparation, the Thermomix® is a valuable ally. It allows you to finely chop ginger, lemongrass and coriander in a few seconds, ensuring a homogeneous diffusion of aromas in the marinade. Feel free to adjust the amount of ginger and lemongrass according to your preferences. If you like spicier dishes, add a little chopped red chilli to the marinade. For a vegetarian or vegan version, replace the chicken with cubes of firm tofu or pieces of tempeh. You can also add vegetables such as peppers, courgettes or red onions for a more colorful and nutritious skewer. For cooking, the barbecue is ideal because it brings an incomparable smoky flavor. However, if you do not have a barbecue, you can cook the skewers in the oven, under the grill, turning them regularly so that they are golden brown on all sides. Serve the skewers hot, sprinkled with toasted sesame seeds for extra crunch. Accompany them with fragrant basmati rice, a Thai cucumber salad or a peanut sauce for a complete and tasty meal. You can also use the marinade juice, reduced over low heat, as an accompanying sauce. The skewers can be prepared in advance and marinated for several hours, or even a whole night, for an even more intense flavor. They also keep well in the refrigerator for a day or two. For faster preparation, you can use powdered ginger and lemongrass, but the taste will be less fresh and intense.
