Description

This chocolate cherry cake is a real eye-catcher on every coffee table! The juicy chocolate base, refined with cocoa and icing sugar, harmonizes perfectly with the creamy cream and the fruity Amarena cherries. I particularly like to bake this cake for Christmas or birthdays, as it simply looks festive and tastes incredibly delicious. The preparation is a little more complex, but the result is worth it. A tip: The cake can be prepared well in advance and tastes best when it has been refrigerated for a few hours.

Ingredients (11 ingredients)

  • 250 g Flour
  • 30 g Cocoa
  • 100 g Icing sugar
  • 120 g Butter
  • 1 piece Egg
  • 1 piece Egg yolk
  • 1 tsp Baking powder
  • 400 ml Cream
  • 2 tbsp Sugar
  • 100 g Chocolate shavings
  • 100 g Amarena cherries

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 250 g flour, 30 g cocoa, 100 g icing sugar, 120 g butter (in pieces), 1 egg, 1 egg yolk and 1 tsp baking powder to the mixing bowl and process for 2 min./kneading stage to a smooth dough. Wrap the dough in cling film and let it rest in the fridge for about 30 minutes.

Roll out and bake the dough

Line a springform pan (approx. 26 cm diameter) with baking paper. Remove the dough from the fridge and roll it out on a floured work surface. Place the dough in the springform pan and pull up a small edge. Prick the dough several times with a fork. Cover the dough with baking paper. Bake in a preheated oven at 180 °C for approx. 25 minutes. Shortly before the end of the baking time, remove the baking paper and finish baking. Remove from the oven and let it cool.

Whip the cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Add 400 ml cream and 2 tbsp sugar to the mixing bowl. Insert the butterfly and whip for 2 min./speed 3.5 until stiff. Fill the cream into a piping bag.

Decorate the cake

Distribute cream puffs on the surface of the cooled base. Sprinkle 100 g of chocolate shavings over the cream. Distribute 100 g of Amarena cherries on the surface. Store in the refrigerator until serving.
