Description

This chocolate cherry layer cake is a delightful treat, perfect for birthdays or Christmas celebrations. The moist chocolate cake layers, infused with cherry juice and studded with chocolate chips, are complemented by a luscious whipped cream frosting and a generous cherry pie filling. Ingredients (11 ingredients)

  • 15.25 ounce chocolate cake mix
  • 3.9 ounce instant chocolate pudding mix
  • 4 piece eggs
  • 0.75 cup water
  • 0.25 cup vegetable oil
  • 0.5 container maraschino cherries, quartered, juice drained and reserved
  • 12 ounce chocolate chips
  • 1 cup heavy whipping cream
  • 2 tablespoon white sugar
  • 0.5 teaspoon cream of tartar
  • 12 ounce cherry pie filling

Preparation (8 steps)

Prepare the cake pans

Preheat oven to 175°C (350 degrees F). Grease and flour three 9-inch round cake pans. This step is done outside of the Thermomix to ensure the cake bakes properly.

Combine dry ingredients

Add 1 (15.25 ounce) package chocolate cake mix and 1 (3.9 ounce) package instant chocolate pudding mix to the mixing bowl. Mix for 10 Sec./Stufe 3 to combine.

Add wet ingredients and mix

Add 4 eggs, ¾ cup water, and ¼ cup vegetable oil to the mixing bowl. Mix for 20 Sec./Stufe 4 until well combined.

Incorporate cherry juice

Add ½ cup reserved maraschino cherry juice to the mixing bowl. Mix for 10 Sec./Stufe 3 until smooth.

Stir in cherries and chocolate chips

Remove the mixing bowl from the Thermomix base. Stir in ½ (6 ounce) jar quartered maraschino cherries and 1 (12 ounce) bag chocolate chips by hand until evenly distributed throughout the batter. This ensures the cherries and chocolate chips remain intact.

Bake the cakes

Divide cake batter evenly between prepared pans, filling each halfway. Bake cakes in the preheated oven until toothpicks inserted in the centers come out clean, 26 to 32 minutes. Remove from oven and let cool, 10 minutes. Remove from pans and transfer to wire racks to cool completely, about 1 hour. This step is done outside of the Thermomix to ensure the cake bakes properly.

Prepare whipped cream

Place 1 cup heavy whipping cream, 2 tablespoons white sugar, and ½ teaspoon cream of tartar into the mixing bowl. Insert the butterfly whisk. Whip for 2-3 Min./Stufe 3.5 until stiff peaks form. Watch carefully to avoid over-whipping.

Assemble the cake

Spread 1/4 of the whipped cream evenly over the bottom cake layer. Cover whipped cream with a thin layer of 1 (12 ounce) can cherry pie filling. Place second layer of cake on top. Spread another 1/4 of the whipped cream over the second layer; cover with pie filling. Place third layer of cake on top. Spread remaining whipped cream on top; cover with remaining pie filling. This step is done outside of the Thermomix to assemble the cake.
