Description

This gratinated cauliflower is a hearty and uncomplicated dish, perfect for a cozy evening. The cauliflower is first pre-cooked in the Thermomix® and then covered with a creamy sauce seasoned with nutmeg. The grated cheese provides a golden brown crust and a delicious taste. I like to make this casserole when I need something quick and still want something warm and hearty on the table. It is vegetarian and can be prepared well in advance. If you like, you can add some bacon.

Ingredients (9 ingredients)

  • 1 Kopf Cauliflower
  • 2 tbsp Butter
  • 200 ml Milk
  • 100 ml Cream
  • 1 tbsp Flour
  • 1 pinch Nutmeg
  • to taste Salt
  • to taste Pepper
  • Cheese, grated

Preparation (5 steps)

Prepare cauliflower

Divide the cauliflower into florets and place in a saucepan with boiling salted water. Cook for about 10 minutes until tender but firm. Then drain and place in a greased baking dish.

Prepare sauce

Thermomix® Setting

Put 2 tbsp butter in the mixing bowl and melt for 3 min./50°C/speed 1.

Make roux

Thermomix® Setting
2 min/212°F/Speed 2 100

Add 1 tbsp flour and sauté for 2 min./100°C/speed 2.

Cook creamy sauce

Thermomix® Setting
8 min/194°F/Speed 3 90

Add 200 ml milk and 100 ml cream to the mixing bowl. Season with 1 pinch of nutmeg, salt and pepper and let thicken for 8 min./90°C/speed 3 while stirring.

Complete casserole

Pour the sauce over the cauliflower in the baking dish. Sprinkle with grated cheese and bake in a preheated oven at 180 °C top/bottom heat for about 20 - 30 minutes until the cheese is golden brown.
