Description

This hearty main course with the Thermomix® combines wine sauerkraut, bacon and onions to create a savory taste experience. Refined with broth and a hint of pineapple juice, the braised sauerkraut is ideal for the cold season. The preparation takes a total of 150 minutes, with the active working time being only about 25 minutes. The recipe is designed for 6 servings and is perfect as a family meal or as a side dish to meat dishes.

  • 500 g Wine Sauerkraut
  • 2 EL Broth powder
  • 2 Stück Onions
  • 250 g Bacon, streaky, diced
  • 2 EL Lard
  • Sugar
  • Pineapple juice
  • Salt
  • Pepper

Preparation (7 steps)

Chop onions

Place 2 onions in the mixing bowl and chop for 3 seconds/speed 5. Scrape down with the spatula.

Sauté the bacon

Add 2 tablespoons of lard and 250 g of diced, streaky bacon to the mixing bowl and sauté for 5 minutes/120°C/speed 1.

Add sauerkraut and broth

Add 500 g wine sauerkraut and 2 tablespoons broth powder to the mixing bowl.

Season and add liquid

Season with sugar, salt and pepper. Top up with a little water and possibly pineapple juice (amount to taste). Mix everything well: 10 seconds/reverse/speed 2.

Braising in the Thermomix

30 min/212°F/Linkslauf/Speed 1 100 Reverse

Close the mixing bowl and braise the sauerkraut for 30 minutes/100°C/reverse/speed 1. Make sure that there is enough liquid. If necessary, add some water.

Transfer and braise in the oven

Transfer the sauerkraut to an ovenproof roasting pan or casserole dish. If necessary, add a little more water. Place the roasting pan in the preheated oven at 175 °C top/bottom heat and braise for another 20 - 30 minutes. Stir occasionally and add some liquid if necessary. The sauerkraut is ready when it has taken on a beautiful brownish color.

Seasoning

Season the sauerkraut with pepper and salt and possibly a little sugar.
