Description

  • 50 g Durum wheat semolina
  • 80 g Durum wheat semolina
  • 180 ml Water
  • 8 g Yeast cube
  • 300 g Wheat flour Type 550
  • 2 EL Extra virgin olive oil
  • 1.5 TL Salt
  • 40 g Roasted onions

Prepare pre-dough

Add 1 g yeast cube, 250 ml water and 250 g wheat flour type 550 to the mixing bowl and stir for 2 min./37°C/speed 2.

Let pre-dough rest

Let the pre-dough rest covered in a warm place for at least 1 hour.

Prepare ciabatta dough

Add 180 ml water, 8 g yeast cube, 300 g wheat flour type 550, 2 tbsp extra virgin olive oil and 1.5 tsp salt to the pre-dough in the mixing bowl.

Knead dough

Insert Patix dough knife instead of the standard knife. Knead the dough for 3 min./kneading level.

Add roasted onions

Thermomix® Setting

Add 40 g roasted onions to the dough and fold in for 30 sec./reverse/speed 2.

Let dough rest

Place the dough in a lightly oiled bowl, cover and let rise for 1 hour in a warm place.

Shape dough

Place the dough on a floured work surface and carefully shape into two ciabatta loaves. Use 50 g durum wheat semolina.

Bake ciabatta

Place the ciabatta loaves on a baking sheet lined with baking paper and bake in a preheated oven at 220°C top/bottom heat for approx. 25-30 minutes.

Use MilkiMizer (optional)

For a creamy texture, the MilkiMizer can be used. Add 200 ml milk to the mixing bowl and whisk for 3 min./90°C/speed 3.5 with the MilkiMizer.
