Description

These tomato potato tufts are a delicious and colorful idea to enrich a buffet or accompany a main course. The mashed potatoes, enriched by the intense flavor of the tomato paste and the delicacy of the butter, are transformed into small golden and crunchy morsels. I often prepare them when I have guests for dinner, because they are easy to make and everyone always likes them. The recipe is simple and quick, perfect even for those who do not have much experience in the kitchen. A touch of grated Parmesan cheese adds an extra flavor to these delicious appetizers. Ideal for an aperitif or as an original side dish!

Ingredients (7 ingredients)

  • 500 g Potatoes
  • 50 g Butter
  • 2 piece Egg yolk
  • 30 g Grated Parmigiano Reggiano
  • 20 g Tomato paste
  • 1 pinch Salt
  • 1 pinch Black pepper

Preparation (5 steps)

Boiled potatoes

Peel the potatoes and cut them into pieces. Place the potatoes in the bowl and add cold water to cover them. Cook for 30 Min./100°C/Stufe 1.

Mashed potatoes

Thermomix® Setting
20 sec/Speed 4

Drain the cooked potatoes and put them back in the bowl. Add 50g of cubed butter, salt and black pepper. Process for 20 Sek./Stufe 4 until a smooth and lump-free puree is obtained.

Tomato mixture

Thermomix® Setting
15 sec/Speed 3

Add 2 egg yolks and 20g of tomato paste to the mashed potatoes. Mix for 15 Sek./Stufe 3 until a homogeneous mixture is obtained.

Form the tufts

Transfer the mixture to a pastry bag with a wide star nozzle. Line a baking sheet with parchment paper and form potato tufts with a diameter of about 5 cm.

Baking in the oven

Bake in a preheated oven at 200°C for 15 minutes, then turn on the grill and let it cook for another 5 minutes to brown the top. Remove from the oven and serve the tomato potato tufts immediately.
