Description

This plum and coconut clafoutis is a simple and delicious summer dessert. I love the combination of juicy plums and grated coconut, which brings an exotic touch. Preparation is quick with the Thermomix®, and baking in a traditional oven gives a golden and soft result. It's a perfect cake for a Sunday brunch or an indulgent snack. Coconut can easily be replaced with almond powder for a different variation. A real treat for the whole family!

Ingredients (10 ingredients)

  • 500 g plums
  • 3 piece eggs
  • 15 cl milk
  • 100 g grated coconut
  • 50 g butter
  • 50 g flour
  • 30 g sugar
  • 1 packet vanilla sugar
  • 1 Goutte vanilla flavouring
  • 1 pinch fine salt

Preparation (3 steps)

Preparation of plums

Wash and pit 500 g of plums. Cut the plums in half or in quarters depending on their size and set aside in a salad bowl.

Preparation of the clafoutis batter

Thermomix® Setting
20 sec/Speed 4

In the Thermomix bowl, add 3 eggs, 15 cl of milk, 100 g of grated coconut, 50 g of melted butter, 50 g of flour, 30 g of sugar, 1 sachet of vanilla sugar, a few drops of vanilla flavouring and 1 pinch of salt. Mix everything for 20 Sek./Stufe 4.

Assembly and baking

Butter and flour a gratin dish. Arrange the cut plums in the dish, then pour the clafoutis batter over them. Bake in a traditional oven preheated to 180°C for about 40 minutes, or until the clafoutis is golden and cooked.
