Description

This zucchini and fresh cheese clafoutis is a simple and tasty recipe, perfect for a light lunch or summer dinner. I love the soft texture and delicate taste of the zucchini, enhanced by the freshness of the fresh cheese and the melting of the grated cheese. The preparation is quick with the Thermomix®, and the baking in the oven gives a golden and appetizing result. Feel free to add some cherry tomatoes for a touch of color and extra flavor. A vegetarian dish that will please the whole family!

Ingredients (11 ingredients)

  • 10 cl of oil
  • 3 piece eggs
  • 100 g of grated gruyere
  • Salt or fine salt
  • Pepper
  • 1 packet of baking powder
  • 150 g of flour
  • Cherry tomato
  • of ham
  • 150 g of cottage cheese
  • 1 courgette zucchini

Preparation (5 steps)

Preheat the oven and prepare the dry ingredients

Preheat the oven to 180°C. In a salad bowl, mix 150 g of flour and 1 sachet of baking powder. Set aside.

Mix the eggs, oil and fresh cheese

10 sec/Speed 4

In the Thermomix bowl, add 3 eggs and 10 cl of oil. Mix 10 Sek./Stufe 4. Then add 150 g of fresh cheese and mix again 10 Sek./Stufe 4. If you prefer a smoother texture, extend the mixing for a few seconds.

Incorporate the dry ingredients and other ingredients

Gradually add the flour/baking powder mixture to the previous mixture in the Thermomix. Mix 20 Sek./Stufe 3. Salt and pepper to your liking. Then add 100 g of grated cheese, cherry tomatoes cut in half and ham cubes. Mix gently 5 Sek./Linkslauf Stufe 2 so as not to crush the tomatoes.

Add the zucchini

Cut 1 zucchini into thin slices. Add the zucchini slices to the Thermomix bowl and mix gently 5 Sek./Linkslauf Stufe 2.

Bake in the oven

Pour the preparation into a mold of your choice (ideally silicone). Bake at 180°C for about 40 minutes. Check the cooking with the tip of a knife: it should come out slightly damp.
