Description

This classic soft cake is a simple and delicious cake, perfect for an afternoon snack or an impromptu dessert. I often prepare it when I crave a comforting sweetness.   • 3 packet vanilla sugar
  • 9 c. à s. oil
  • 9 c. à s. milk
  • 3 piece whole eggs

Insert the whisk into the Thermomix bowl. Add the 3 whole eggs, the icing sugar and the vanilla sugar sachets. Mix for 5 Min./Stufe 4, without heating, until a frothy and light mixture is obtained.

Remove the whisk. Add the milk and oil to the bowl. Mix for 30 Sek./Stufe 3, without heating, to properly incorporate the liquids.

Add the flour and baking powder to the bowl. Mix for 1 Min./Stufe 3, without heating, until a smooth and homogeneous dough is obtained. Use the spatula to scrape the edges if necessary.

Preparation and cooking

Preheat the oven to 180°C. Butter and flour a springform or round mold. Pour the dough into the prepared mold. Bake in the preheated oven and cook for 45 Min./180°C. Check the cooking with a toothpick.

Decoration

Let the cake cool before removing it from the mold. Decorate with icing sugar and stencils as desired. Serve and enjoy!

It's a simple cake, certainly, but its simplicity is precisely what makes it so comforting and timeless. Each ingredient plays a crucial role in the success of this soft cake. The flour, preferably of type T55, provides the necessary structure. The icing sugar, finer than granulated sugar, dissolves more easily and contributes to a lighter texture. The vanilla sugar, meanwhile, delicately perfumes the cake. The oil, neutral in taste (sunflower or rapeseed), brings softness without masking the other flavors. The milk hydrates the dough and also contributes to its tenderness. The eggs, of course, are essential to bind the ingredients and give body to the cake. Finally, the baking powder ensures a beautiful rise and an airy texture. With the Thermomix®, the preparation is child's play. The crucial step is mixing the eggs and sugar. It is important to respect the indicated time (5 minutes) to obtain a very frothy mixture, which will guarantee a light cake. Do not hesitate to use the spatula to scrape the edges of the bowl after adding the flour and baking powder, to ensure that all the ingredients are well incorporated. For optimal cooking, preheat your oven well and monitor the cooking with a toothpick. It must come out dry. This soft cake lends itself to many variations. For a vegetarian version, simply use the ingredients indicated. For a vegan version, you can replace the eggs with applesauce (about 150g) and the milk with a plant-based drink (almond, soy, etc.). You can also personalize the taste by adding lemon or orange zest, spices (cinnamon, ginger), or even chocolate chips. For tasting, the classic soft cake is perfect as is, sprinkled with icing sugar. But you can also accompany it with a scoop of vanilla ice cream, a custard, or a red fruit coulis. It also goes very well with a cup of tea or coffee. The soft cake can be kept for several days in an airtight box, at room temperature. You can also freeze it, whole or in portions.
