Description

These coconut macaroons on wafers are a quick and easy Thermomix® recipe for the Christmas season. With just a few ingredients like egg whites, sugar and shredded coconut, the cookies are ready in 30 minutes.   • 4 Egg whites
  • 1 Prise(n) Salt
  • 200 g Sugar
  • 200 g Shredded coconut
  • 45 Wafers

Preparation (5 steps)

Whisk egg whites until stiff

Place 4 egg whites and 1 pinch of salt in the mixing bowl. Insert the butterfly whisk and whisk for 3 min./speed 3.5 until stiff. Transfer the egg whites and remove the butterfly whisk.

Sprinkle in sugar

Return the egg whites to the mixing bowl. Gradually sprinkle in 200 g of sugar through the lid opening and beat for 2 min./speed 3 until the sugar is completely dissolved.

Stir in shredded coconut

Add 200 g of shredded coconut to the mixing bowl and stir in for 20 sec./reverse speed 2. Use the spatula to scrape down from the edge and, if necessary, mix again for 10 sec./reverse speed 2.

Cover wafers

Line a baking sheet with baking paper and spread 45 wafers on it with some space in between. Use two teaspoons to distribute small heaps of the coconut macaroon mixture onto the wafers.

Bake macaroons

Bake in a preheated oven at 175 °C top/bottom heat for approx. 15-20 minutes until the macaroons are lightly browned.
