Description

This stew with chicken meatballs is a traditional Spanish dish, perfect for cold winter days. The combination of chickpeas, vegetables and chicken meat, together with homemade meatballs, makes it a very complete and comforting dish. I have been preparing it for years and it is always a success at home. The key is in the broth, which must be tasty and concentrated. You can add a little saffron to give it a special touch. Ideal for a family meal or for a dinner with friends. I hope you like it as much as we do!

Ingredients (24 ingredients)

  • 4 raciones portions
  • 250 g lean ham
  • 500 g chicken breast
  • 100 g white sausage
  • 50 g red sausage
  • 75 g white
  • 200 g breadcrumbs
  • 1 piece egg
  • parsley
  • 1 clove garlic
  • 0.5 piece squeezed lemon
  • to taste salt
  • 200 g dried chickpeas
  • 1 trozo celery
  • 1 piece turnip
  • 1 piece parsnip
  • 1 pastilla broth
  • to taste saffron
  • water
  • 1 piece carrot
  • 2 piece potatoes
  • 1 trozo chorizo
  • 1 piece chicken thigh
  • 1 hueso lamb

Preparation (6 steps)

Soak the chickpeas

The night before, put the 200g of dried chickpeas to soak in a container with plenty of water.

Cook the vegetables, meat and chickpeas

Thermomix® Setting
30 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Put in the Thermomix bowl the 200g of previously washed chickpeas, 1 piece of celery, 1 turnip, 1 parsnip, 1 stock cube, saffron, 1 carrot, 2 potatoes, 1 piece of chorizo, 1 chicken thigh, 1 lamb bone and water to cover. Program 30 Min./100°C/Left turn/Spoon speed. Remove the impurities left by the meat when it boils.

Prepare the meatball dough

In a bowl, mix the 250g of lean ham, the 500g of chicken breast, the 100g of white sausage, the 50g of red sausage, the 75g of white, the 200g of breadcrumbs, 1 egg, chopped parsley, 1 chopped garlic clove, 1/2 squeezed lemon and salt to taste. Mix all the ingredients well until you get a homogeneous mixture.

Strain the broth and cook the meatballs

Thermomix® Setting
20 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Strain the stew broth in a container. Pour the strained broth back into the Thermomix bowl. Form the meatballs with the prepared dough and add them to the broth. Program 20 Min./100°C/Left turn/Spoon speed.

Prepare the soup (optional)

10 min/212°F/Velocidad 1 100

If desired, part of the broth can be used to prepare a soup. To do this, remove a portion of the broth from the Thermomix bowl and add noodles or rice. Program 10 Min./100°C/Speed 1.

Serve the stew

Serve the hot stew in deep dishes, accompanied by the meatballs and, if prepared, the soup. Ready to enjoy!
