Description

This Madrid stew is a comforting spoon dish, perfect for cold winter days. The combination of chickpeas, varied meats and vegetables creates a tasty and nutritious broth. I have been preparing it for years and it is always a success at home. It is ideal to share with family or friends, especially at Christmas or New Year's Eve. Although it takes time, the result is worth it. It can be prepared in advance and reheated, which makes it perfect for special occasions. A traditional dish that never fails!

Ingredients (19 ingredients)

  • 1 puñado dried chickpeas
  • 1 piece chicken thigh
  • 1 piece chicken carcass
  • 1 trozo beef (tender)
  • 1 punta ham
  • 1 hueso ham
  • 1 hueso beef
  • 1 hueso backbone
  • 1 trozo streaky bacon
  • 3 piece potatoes
  • 4 piece large carrots
  • 1 a gusto turnip
  • 1 a gusto leek
  • 1 a gusto parsnip
  • 0.5 piece tomato
  • 1 clove chopped garlic
  • 1 puñado thin noodles
  • 3 litro water
  • 1 puñado salt

Preparation (7 steps)

Preparation of the meats and bones

Wash all the meats and bones well. Place them in a large pot (not in the Thermomix). Cover with 3 liters of water. Bring to a boil in the pot (not in the Thermomix) and, for 5-10 minutes, remove all the impurities that are released with a slotted spoon.

Add vegetables and chickpeas

Add the potatoes, carrots, turnip, leek, parsnip, tomato and chopped garlic to the pot. Add the chickpeas (preferably in a cloth mesh). Add a handful of salt. Close the pressure cooker.

Pressure cooking

Cook in the pressure cooker for 40-45 minutes. Once the pot can be opened, uncover and let it cook for another 10-15 minutes without a lid over medium heat (not in the Thermomix).

Strain the broth

Strain the stew broth and reserve it in another saucepan (not in the Thermomix).

Cook the noodles

Thermomix® Setting
7 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Pour the strained broth into the Thermomix glass. Taste the broth and correct salt if necessary. Add the thin noodles and program 7 minutes/100°C/Reverse rotation/Spoon speed.

Prepare the solid ingredients

Separate the meats, vegetables and chickpeas from the broth. Chop the meats and vegetables into portions.

Plate

Serve the hot soup in deep plates. Add the chickpeas, meat and chopped vegetables to each plate.
