Description

This vegan Madrid stew is a comforting and nutritious version of the classic Spanish dish. Prepared with tender chickpeas, fresh vegetables such as carrots, potatoes, turnip, celery, leek and cabbage, this dish is perfect for cold winter days. The addition of paprika gives it a smoky and tasty touch. It can be enriched with heura and vegan chorizo for an even more complete experience. An ideal dish to share with the family and enjoy the traditional flavors of Spanish cuisine in a healthy and delicious way! The preparation is simple and the result is a dish full of flavor and nutrients.

Ingredients (18 ingredients)

  • 225 gr Raw chickpeas
  • 1 piece onion
  • 2 piece carrots
  • 3.5 piece potatoes
  • 1 piece turnip
  • 1.5 rama celery
  • 1.5 piece leeks
  • 0.5 piece cabbage
  • 1 tsp paprika
  • 2 cube concentrate (optional)
  • 1 piece Water
  • 1 piece Heura (optional)
  • 1 piece Vegan chorizo (optional)
  • 1 puñado Pasta
  • 1 piece Stew broth
  • 1 piece Stew cabbage
  • 2 clove garlic
  • 1 tsp Paprika (to taste)

Preparation (5 steps)

Initial preparation of chickpeas and vegetables

Place 200-250 gr of raw chickpeas (soaked in water overnight), 1 onion, 2 carrots, 3-4 potatoes, 1 turnip, 1-2 celery stalks, 1-2 leeks and 1/2 cabbage in the Thermomix bowl. Add 2 concentrate cubes (optional), 1 tsp of paprika and salt to taste. Cover with water up to 3/4 of the bowl.

Cooking the stew

Thermomix® Setting
12 min/Varoma/Speed 1 Varoma

Close the Thermomix bowl and program 12 Min./Varoma/Stufe 1. Make sure the lid is tightly closed and the valve is in the steam position. Once the time is up, let the pressure release naturally before opening the bowl.

Preparing the soup

8 min/212°F/Speed 1 100

Strain the stew broth into a small saucepan. Pour the strained broth into the Thermomix bowl. Add 1 handful of pasta and program 8 Min./100°C/Stufe 1. Verify that the pasta is cooked al dente.

Cabbage preparation

Thermomix® Setting
5 min/248°F/Linkslauf Speed 1 120 Reverse

Cut 1/2 cabbage into very small pieces. Pour a splash of oil into the Thermomix bowl. Add the chopped cabbage, 2 minced garlic cloves and 1 tsp of paprika (to taste). Program 5 Min./120°C/Linkslauf Stufe 1. Stir with the spatula to ensure even cooking.

Serving the stew

Serve the soup hot. Accompany with chickpeas, cabbage, potato and carrot. Optionally, add heura and vegan chorizo. Adjust salt if necessary. Enjoy!
