Description

This braised red cabbage is an absolute must for the cold season! I especially like to make it for Christmas or New Year's Eve because it tastes so wonderfully festive. The red wine and spices give it a deep, warm note that goes perfectly with roasts or dumplings. The cranberries provide a fruity sweetness that wonderfully rounds off the dish. And best of all: it can be prepared very well in advance and tastes almost even better when reheated! A true classic that is child's play with the Thermomix®.

Ingredients (11 ingredients)

  • 1.2 kg Red cabbage
  • 3 Stk. Bay leaves
  • 2 Stk. Cinnamon sticks
  • 300 ml Dry red wine
  • 60 ml Apple vinegar
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 4 Stk. Onions
  • 4 EL Goose fat
  • 2 EL Honey
  • 2 EL Thickened game cranberries

Preparation (6 steps)

Chop onions

Peel, quarter the onions and put them in the mixing bowl. 4 onions are chopped for 3 sec./level 5.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the goose fat to the onions in the mixing bowl. 4 tbsp of goose fat are sautéed for 3 min./120°C/level 1.

Prepare red cabbage

Clean and quarter the red cabbage and remove the stalk. Cut or shred the red cabbage into bite-sized pieces.

Chop red cabbage

5 sec/Speed 4

Add the prepared red cabbage to the mixing bowl in portions and chop for 5 sec./level 4. Transfer the chopped red cabbage to a bowl and process the remaining red cabbage in the same way.

Cook red cabbage

45 min/212°F/Linkslauf Speed 1 100 Reverse

Put all the chopped red cabbage back into the mixing bowl. Add bay leaves, cinnamon sticks, red wine, apple vinegar, salt and pepper. Add 3 bay leaves, 2 cinnamon sticks, 300 ml red wine, 60 ml apple vinegar, salt and pepper to taste. Cook everything for 45 min./100°C/reverse rotation level 1.

Season and refine

5 min/212°F/Linkslauf Speed 1 100 Reverse

After the cooking time, add the honey and cranberries. Stir in 2 tbsp of honey and 2 tbsp of cranberries. Cook for a further 5 min./100°C/reverse rotation level 1. Then season with salt and pepper.
