Description

This Yucatecan breakfast is an explosion of flavour that will transport you directly to Mexico. The motuleño eggs, with their slightly spicy red sauce, ham, peas and grated cheese, are a true delight. The combination with the fried plantain gives it a sweet and crunchy touch that contrasts perfectly. It is an ideal dish for a weekend brunch or to surprise your guests with a different and colourful breakfast. Go ahead and prepare it, you will love it!

Ingredients (12 ingredients)

  • 4 piece Egg
  • 8 piece Corn tortilla
  • 0.5 piece White onion
  • 1 clove Garlic
  • 5 piece Red tomato
  • 1.5 tazas Refried black bean
  • 1.5 tazas Turkey ham
  • 1 cup Cooked pea
  • 1 cup Grated cheese
  • 1 piece Plantain
  • 0.5 cup Oil
  • 1 pinch Pepper

Preparation (9 steps)

Cooking the tomatoes

Thermomix® Setting
10 min/212°F/Speed 1 100

Place the red tomatoes, garlic and onion in the Thermomix bowl. Add water to cover the ingredients. Program 10 Min./100°C/Stufe 1.

Preparation of the plantain

While the tomatoes are cooking, cut the plantain into thin slices approximately 3 cm wide. Set aside.

Frying the plantain slices

In a separate pan, heat ½ cup of oil. Fry the plantain slices until golden brown. Remove from heat and set aside.

Sautéing the tortillas

In the same pan where the plantains were fried, sauté the corn tortillas in the hot oil for 1 minute on each side. Remove from the oil and set aside.

Making the sauce

Thermomix® Setting

Once the tomatoes, garlic and onion are cooked, pour them into the Thermomix bowl. Blend 30 Seg./Stufe 8 until a homogeneous sauce is obtained.

Frying the sauce

Thermomix® Setting
5 min/248°F/Speed 1 120

Pour the sauce into the Thermomix bowl. Add a little oil, salt and pepper. Program 5 Min./120°C/Stufe 1.

Frying the eggs

In the same pan where the tortillas and plantains were fried, fry the eggs one by one until you get fried eggs. Set aside.

Assembly of the dish

Spread a bed of refried black beans as the base of the dish. Place a sautéed tortilla on the beans. Place a fried egg on the tortilla. Place another sautéed tortilla on the egg.

Serve

Bathe with the red sauce. Sprinkle the chopped turkey ham, cooked peas and grated cheese. Place some slices of fried plantain on the plate. Serve hot.
