Description

These spicy breakfast quesadillas are a fantastic way to kickstart your day! I've been making these for weekend brunches for years, and they're always a hit. The combination of the slightly spicy jalapenos, savory Canadian-style bacon, and melted cheese is simply irresistible. It's a quick and easy recipe, perfect for when you want something a little more exciting than your usual breakfast. Feel free to adjust the amount of jalapenos to your liking – I sometimes add a bit more for an extra kick! Serve with a dollop of sour cream and salsa for the perfect finish. These quesadillas are also great for a quick lunch or snack.

Ingredients (13 ingredients)

  • 3 tbsp unsalted butter
  • 2 piece jalapeno peppers, seeded and chopped
  • 3 slice Canadian-style bacon, chopped
  • 4 piece large eggs
  • 2 tbsp whole milk
  • 1 tsp extra virgin olive oil
  • 1 pinch sea salt
  • 1 cup shredded Mexican blend cheese
  • 2 ounce cream cheese, softened
  • 2 piece flour tortillas
  • 2 piece green onions, sliced
  • 1 tbsp Sour cream
  • 0.25 tsp Salsa

Chop Jalapenos

Add 2 seeded and chopped jalapeno peppers to the mixing bowl and chop for 3 Sec./Stufe 5.

Sauté Jalapenos and Bacon

Add 1 tablespoon of unsalted butter and 3 slices of chopped Canadian-style bacon to the mixing bowl with the chopped jalapenos. Sauté for 3 Min./120°C/Stufe 1.

Remove Jalapenos and Bacon

Remove the sautéed jalapenos and Canadian-style bacon from the mixing bowl and set aside.

Whisk Eggs and Milk

In a separate bowl, whisk together 4 large eggs and 2 tablespoons of whole milk until frothy. Set aside.

Cook Eggs

Add 1 tablespoon of unsalted butter and 1 teaspoon of extra virgin olive oil to the mixing bowl. Heat for 2 Min./60°C/Stufe 1.

Add Eggs and Cook

Thermomix® Setting

Pour the whisked eggs into the mixing bowl. Sprinkle 1 pinch of sea salt over the eggs. Cook for 5 Min./90°C/Stufe 1, or until the sides are set but the middle is still wet.

Add Cheese, Peppers, and Bacon

Sprinkle 1/3 cup of shredded Mexican blend cheese, the cooked jalapenos, and Canadian-style bacon over the eggs in the mixing bowl. Cook for 1 Min./60°C/Stufe 1.

Transfer Eggs to Plate

Carefully transfer the cooked eggs to a plate and set aside.

Spread Cream Cheese

Spread softened cream cheese over 2 flour tortillas.

Melt Butter in Skillet

Melt 1/2 tablespoon of unsalted butter in a skillet over medium heat.

Assemble Quesadilla

Place one tortilla in the skillet, cream cheese side up. Sprinkle 1/3 cup of shredded Mexican blend cheese over the entire surface. Place half of the eggs over one half of the tortilla. Sprinkle half of the sliced green onions over the eggs. Cook over medium to medium-low heat until the cheese is melted, then fold in half.

Repeat for Second Quesadilla

Repeat the process with the other tortilla and remaining eggs.

Serve

Remove to a cutting board and let sit for 1-2 minutes before slicing. Serve with sour cream and salsa.
