Description

This colorful zucchini raw vegetable salad is an absolute highlight in summer! The crunchy zucchini, peppers and tomatoes harmonize perfectly with the slightly sour and sweet marinade. I especially like to make it when I have guests because it is so easy to prepare and tastes super fresh. The different colors also make it a visual eye-catcher. It goes perfectly with grilled food or simply as a light meal in between. A great recipe that is quick and guaranteed to please everyone! And the best part: it's also super healthy!

Ingredients (10 ingredients)

  • 2 piece green Zucchini
  • 1 piece yellow Zucchini
  • 1 piece Onion, small
  • 1 piece Tomato
  • 1 piece red Bell pepper
  • 300 ml Herb vinegar
  • 150 g Sugar
  • 1 tsp Salt
  • 0.25 tsp black Pepper from the mill
  • 1 tsp Mustard

Preparation (3 steps)

Prepare vinegar stock

Thermomix® Setting
20 min/212°F/Speed 1 100

Put 300 ml herb vinegar, 150 g sugar, 1 tsp salt, 1/4 tsp black pepper from the mill and 1 tsp mustard into the mixing bowl and simmer for 20 min./100°C/speed 1 without the measuring cup.

Prepare vegetables

While the stock is simmering, wash the 2 green and 1 yellow zucchini, halve, core and cut into 5 mm thin half rings. Wash the 1 red bell pepper and 1 tomato, core and cut into 5 mm thin strips. Peel the 1 onion and cut into very thin half rings.

Mix vegetables

Put the sliced vegetables into a suitable bowl. After the cooking time, carefully pour the hot stock over the vegetables and mix everything carefully together.
