Description

This colorful carrot salad with juicy oranges is a real eye-catcher and tastes simply fantastic! I love using the purple carrots because they give the salad a special touch. The creamy sesame-lime dressing perfectly complements the dish. The salad is quick to prepare and is great as a light meal or side dish. Especially in winter, when oranges are in season, it is an absolute must. It is vegetarian and can easily be made vegan by replacing the honey with agave syrup. A great recipe that is always well received!

Ingredients (13 ingredients)

  • 500 g purple carrots
  • 1 piece red onion
  • 2 tbsp Oil
  • Salt
  • Pepper
  • 2 tbsp Apple vinegar
  • 100 g Sprout mix
  • 2 piece Oranges
  • 75 g Tahin (Sesame paste; glass)
  • 1 tbsp liquid Honey
  • 1 piece Lime, juice of
  • 1 bunch Coriander
  • 1 Beet Cress

Preparation (10 steps)

Prepare carrots and onion

Peel 500 g purple carrots and 1 red onion and cut into thin slices or rings. Set aside the prepared ingredients.

Sauté carrots and onions

Heat 2 tbsp oil in a pan. Sauté the sliced carrots and onions in it for 2–3 minutes. Season with salt and pepper. Remove the pan from the heat.

Deglaze and cook carrots and onions

Add 2 tbsp apple vinegar to the sautéed carrots and onions and cook for 2–3 minutes. Then let it cool down.

Prepare oranges

Peel 2 oranges so that the white skin is completely removed. Halve the fruits lengthwise and cut into slices crosswise. Set aside the prepared oranges.

Wash sprouts

Wash 100 g sprout mix in a sieve and drain.

Mix salad

Mix the cooled carrots and onions, the orange slices and the sprouts in a bowl.

Prepare dressing

Thermomix® Setting
20 sec/Speed 3

Put 75 g tahini (sesame paste), 1 tbsp liquid honey, juice of 1 lime and 5 tbsp water in the mixing bowl and stir for 20 sec/speed 3.

Season dressing

Season the dressing with salt and pepper and add a little more water if necessary to achieve the desired consistency.

Prepare coriander

Wash 1 bunch of coriander, shake dry and pluck the leaves smaller.

Arrange salad

Arrange the carrot-orange salad with the tahini dressing. Sprinkle the coriander leaves over it. Cut 1 bed of cress from the bed and sprinkle it over as well. Serve immediately.
