Description

This quince compote with lingonberries is a poem! I especially like to make it in autumn when quinces are in season. The combination of the slightly sour aroma of the quinces and the sweetness of the lingonberries is simply unbeatable. With the Thermomix® the preparation is very easy and the result tastes simply delicious. Perfect as a dessert or side dish to game dishes. The compote can also be prepared well in advance and stored in the refrigerator. An absolute must for the cold season!

Ingredients (8 ingredients)

  • 4 Stück Quinces
  • 500 ml Apple juice
  • 1 Pck. Vanilla sugar
  • 100 g brown sugar
  • 1 Stange Cinnamon
  • 1 Stück untreated Lemon
  • 1.5 TL Cornstarch
  • 2 EL Wild lingonberries (jar)

Preparation (6 steps)

Prepare quinces

Wash the quinces, quarter them and remove the core. Place the quince pieces in the mixing bowl.

Chop quinces

Chop the quince pieces in the mixing bowl for 5 sec./speed 5.

Add ingredients and cook

Thermomix® Setting
25 min/212°F/Speed 1 100

Add apple juice, vanilla sugar, brown sugar, cinnamon and the zest and juice of an untreated lemon to the quinces in the mixing bowl. Cook everything for 25 min./100°C/speed 1.

Thicken cornstarch

Thermomix® Setting
3 min/212°F/Speed 2 100

Mix cornstarch with a little cold water and add to the mixing bowl. Cook for another 3 min./100°C/speed 2.

Stir in lingonberries

Thermomix® Setting
1 min/Linkslauf Speed 1 Reverse

Add the wild lingonberries and stir in for 1 min./reverse rotation speed 1.

Let compote cool

Pour the quince compote into a bowl and let it cool. Taste again before serving.
