Description

This hearty bean and sausage soup is a real soul food for cold days! I especially like to make it in autumn and winter when you need something hearty and warming. The combination of different types of beans, spicy sausages and a slight spiciness makes it an absolute taste experience. The soup is easy to prepare and can be prepared well in advance. Perfect for a quick lunch or a cozy dinner with friends. If you don't like it so spicy, you can of course vary the amount of Tabasco. A dollop of cream rounds it off perfectly!

Ingredients (21 ingredients)

  • 400 g Potatoes
  • 200 g Green beans
  • 1 l Vegetable broth (instant)
  • 1 can Kidney beans
  • 1 can Bean kernels
  • 2 piece Vienna sausages
  • 150 g Cabanossi
  • 100 g Onion
  • 75 g smoked, streaky bacon
  • 2 tbsp Oil
  • 2 tbsp Tomato paste
  • 100 ml Tomato ketchup
  • 100 ml Red wine
  • 200 g Whipping cream
  • to taste Salt
  • to taste Pepper
  • to taste Rose paprika
  • to taste Sugar
  • Lemon juice
  • Tabasco
  • Chives for garnish

Preparation (10 steps)

Prepare potatoes and green beans

Peel, wash and dice the potatoes. Wash, trim and halve the green beans. Set both aside.

Chop onion and bacon

Peel and quarter the onion and place it in the mixing bowl together with the bacon. Chop for 3 sec./speed 5.

Sauté onion and bacon

Add oil and sauté for 3 min./120°C/speed 1.

Add tomato paste and sauté for 1 min./120°C/speed 1.

Add beans and ketchup

Rinse and drain the kidney beans and bean kernels. Add to the mixing bowl together with the ketchup and stir for 1 min./100°C/speed 1.

Deglaze with red wine and broth

Deglaze with red wine and vegetable broth and bring to the boil for 5 min./100°C/speed 1.

Add potatoes and green beans with the remaining broth and cook for 15 min./100°C/speed 1.

Add sausage

Cut the Vienna sausages and Cabanossi into slices and add to the mixing bowl. Heat for 5 min./100°C/speed 1.

Add cream and season

Add whipping cream and heat for 2 min./90°C/speed 1. Season with salt, pepper, rose paprika, sugar, lemon juice and Tabasco.

Serve

Wash the chives, cut into small rolls and sprinkle over the soup. Serve immediately.
