Description

This dumpling-bell pepper casserole is a hearty and satisfying dish that tastes particularly good in the colder months. I like to make it when I have leftover dumplings from the day before. The combination of the soft dumplings, the fruity bell peppers and the spicy sauerkraut is simply unbeatable. The creamy cheese sauce rounds everything off perfectly. If you like, you can also add some smoked bacon or ham. The casserole is easy to prepare and can be prepared well in advance. An ideal dish for the whole family!

Ingredients (14 ingredients)

  • 750 g Dumpling dough "Thuringian Style"
  • 750 g Bell pepper(s) red
  • 2 tbsp Vegetable oil
  • Salt
  • Pepper freshly ground
  • 425 ml Sauerkraut
  • Sugar
  • 200 g Bologna sausage
  • 2 tbsp Butter
  • 3 tbsp Flour
  • 200 ml Milk
  • 200 ml Broth
  • 80 g Mountain cheese grated
  • 2 tbsp Parsley chopped

Preparation (11 steps)

Prepare bell peppers

Halve, clean, wash and cut 750 g of bell peppers into pieces. Place the pepper pieces in a baking dish, drizzle with 2 tbsp vegetable oil, season with a little salt and pepper. Set the baking dish aside.

Prepare dumplings

Prepare 1 pack of dumpling dough according to the package instructions and cook the dumplings. Set the cooked dumplings aside.

Prepare sauerkraut

Season 1 can of sauerkraut with a little sugar and set aside.

Prepare bologna sausage

Cut 200 g of bologna sausage into cubes and mix with the prepared sauerkraut and bell peppers.

Prepare sauce

Put 2 tbsp of butter in the mixing bowl and melt for 3 min./120°C/speed 1.

Add 3 tbsp flour and sauté for 2 min./100°C/speed 2.

Pour in 200 ml milk and 200 ml broth and bring to a boil for 5 min./100°C/speed 3.

Melt cheese

Add 80 g of grated mountain cheese and melt for 2 min./60°C/speed 2.

Layer casserole

Cut the cooked dumplings into slices and layer them in a baking dish in a shingle-like pattern with the sauerkraut mixture. Pour the prepared sauce over it.

Bake casserole

Place the baking dish in the preheated oven and bake at 180 °C (convection oven 160 °C) for approx. 40 - 45 minutes until golden brown.

Serve

Sprinkle the finished dumpling casserole with 2 tbsp of chopped parsley and serve.
