Description

This hearty savoy cabbage and potato gratin from the Thermomix® is a substantial main course with potatoes, savoy cabbage and onions. Preparation with vegetable broth and cream results in a creamy gratin. In about 60 minutes, a vegetarian dish for 6 servings is created. Ideal as a warming family meal on cold autumn and winter days. The working time is approx. 30 minutes.

  • 800 g firm cooking potatoes
  • 1000 g savoy cabbage
  • 1 Stück onion
  • 2 EL butter
  • 150 ml vegetable broth
  • 250 g cream
  • nach Geschmack salt

  • 150 g grated cheese

Preparation (9 steps)

Prepare potatoes and savoy cabbage

Peel and dice 800 g of firm cooking potatoes. Quarter 1 kg of savoy cabbage, remove the stalk and cut the cabbage into small pieces. Peel and quarter 1 onion.

Chop the onion

Place the quartered onion in the mixing bowl and chop for 3 sec./speed 5. If necessary, scrape down with the spatula.

Sauté the onion

Add 2 tbsp butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Steam the savoy cabbage

Thermomix® Setting

Add the chopped savoy cabbage and 150 ml vegetable broth to the mixing bowl and steam for 10 min./100°C/Reverse speed speed 1. Use the spatula to mix everything.

Pre-cook the potatoes

Place the diced potatoes in a pot, cover with cold water, add salt and pre-cook on the stove for 10 minutes. Then drain.

Prepare the cream

In a bowl, mix 250 g cream (whipping cream or cooking cream) with salt, pepper and nutmeg.

Layer the gratin

Place the pre-cooked potatoes and the steamed savoy cabbage in a gratin dish and mix.

Add cream and cheese

Pour the cream over the potato and savoy cabbage mixture and sprinkle everything with 150 g of grated cheese (e.g. Gouda).

Bake the gratin

Bake the gratin in a preheated oven at 200 degrees top and bottom heat for 30 minutes until golden brown.
