Description

This Savoy cabbage and potato gratin from the Thermomix® is a hearty vegetarian main course with potatoes, Savoy cabbage, and cream. Preparation in the Thermomix® takes about 60 minutes, of which 30 minutes are active working time. The recipe is designed for 6 servings and is ideal as a warming family meal in autumn/fall. The combination of potatoes and cabbage makes the casserole particularly filling.

  • 800 g firm potatoes
  • 1000 g Savoy cabbage
  • 1 Stück onion
  • 2 EL butter
  • 150 ml vegetable broth
  • 250 g cream
  • nach Geschmack salt
  • nach Geschmack pepper
  • nach Geschmack nutmeg
  • 150 g grated cheese

Chop the onion

Place 1 onion in the mixing bowl and chop for 3 sec/speed 5. Use the spatula to scrape down the sides.

Sauté the onion

Add 2 tbsp of butter to the chopped onions in the mixing bowl and sauté for 3 min/120°C/speed 1.

Prepare the Savoy cabbage

Quarter 1 kg of Savoy cabbage, remove the stalk, and cut the cabbage into small pieces. Set aside.

Simmer the Savoy cabbage

Add the chopped Savoy cabbage and 150 ml of vegetable broth to the onions in the mixing bowl and simmer for 10 min/100°C/Reverse speed/speed 1.

Prepare the potatoes

Peel and dice 800 g of firm potatoes. Place in a separate pot, cover with cold water, add salt, and pre-cook for 10 minutes. Drain.

Prepare the cream

Whisk 250 g of cream, salt, pepper, and nutmeg in a bowl. Set aside.

Layer the casserole

Place the pre-cooked potatoes and the simmered Savoy cabbage in a casserole dish and mix.

Add cream and cheese

Pour the cream over the potato and Savoy cabbage mixture. Sprinkle 150 g of grated cheese over the top.

Bake the casserole

Bake the casserole in a preheated oven at 200°C top/bottom heat for 30 minutes, until golden brown.
