Description

This autumnal pumpkin lasagna is a vegetarian main course prepared with the Thermomix®. The lasagna consists of pumpkin vegetables, béchamel sauce and lasagna sheets, topped with cheese. The preparation time is about 75 minutes and yields 6 servings. Ideal for a hearty lunch or dinner.

Ingredients (15 ingredients)

  • 1000 g Hokkaido pumpkin
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 400 ml Vegetable stock
  • 400 g Chopped tomatoes
  • 1 EL Olive oil
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 TL Curry
  • 12 Stück Lasagna sheets
  • 150 g Grated cheese
  • 25 g Butter
  • 25 g Flour
  • 600 ml Milk
  • nach Geschmack Nutmeg

Preparation (9 steps)

Prepare pumpkin

Cut 1 kg of pumpkin pulp into approx. 2 cm cubes. Set aside.

Chop onion and garlic

3 sec/Speed 5, 3 sec/Speed 7

Put 1 peeled onion in the mixing bowl and chop for 3 sec./level 5. Add 1 clove of garlic and chop for 3 sec./level 7. Use the spatula to push everything down from the edge.

Sauté pumpkin

3 min/248°F/Speed 1, 2 min/248°F/Speed 1 120

Add 1 tbsp oil and sauté for 3 min./120°C/level 1. Add the pumpkin cubes and sauté for another 2 min./120°C/level 1.

Cook pumpkin

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 400 ml vegetable stock and 400 g chopped tomatoes (from the can). Add 1 tsp curry, salt and pepper to taste. Cook for 10 min./100°C/level 1.

Prepare béchamel sauce

Thermomix® Setting
2 min/122°F/Speed 1 50

Empty and clean the mixing bowl. Put 25 g butter in the mixing bowl and melt for 2 min./50°C/level 1.

Make a roux

Thermomix® Setting

Add 25 g flour and sauté for 2 min./100°C/level 1.

Cook béchamel sauce

Thermomix® Setting
3 min/194°F/Speed 3 90

Add 600 ml milk, salt, pepper and nutmeg to taste. Cook for 3 min./90°C/level 3. Use the spatula to push down from the edge.

Layer lasagna

Preheat the oven to 200°C top/bottom heat. Put a layer of béchamel sauce in a baking dish. Then alternately layer lasagna sheets, pumpkin vegetables, béchamel sauce and grated cheese (150g) until all the ingredients are used up. Finish with a layer of cheese.

Bake lasagna

Bake the lasagna in the preheated oven for 30 minutes.
