Description

This hearty potato broccoli gratin is a vegetarian main course that is baked in the oven. The potatoes and broccoli are baked in a creamy sauce with cheese. The dish is gluten-free and is well suited for a hearty lunch or dinner. Preparation takes about 60 minutes and yields 4 servings. The preparation is done with the Thermomix®.

Ingredients (12 ingredients)

  • 600 g firm cooking potatoes
  • 2 Köpfe Broccoli
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 3 EL Butter
  • 3 EL Flour
  • 250 ml Vegetable stock
  • 250 g Cream
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Nutmeg
  • 100 g grated Cheese

Preparation (7 steps)

Prepare potatoes, onion and garlic

Peel 600 g potatoes and cut into cubes. Cut 2 heads of broccoli into florets. Quarter 1 onion and halve 1 clove of garlic.

Chop onion and garlic

Place the quartered onion and half clove of garlic in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push down.

Sauté onion and garlic

Add 3 tbsp butter and sauté for 3 min./120°C/speed 1.

Prepare roux

Thermomix® Setting
2 min/212°F/Speed 2 100

Add 3 tbsp flour and sauté for 2 min./100°C/speed 2.

Prepare sauce

Thermomix® Setting
5 min/194°F/Speed 3 90

Add 250 ml vegetable stock and 250 g cream and thicken for 5 min./90°C/speed 3 while stirring. Season with salt, pepper and nutmeg.

Precook potatoes and broccoli

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Place the diced potatoes in the simmering basket. Add 500 ml water to the mixing bowl, insert the simmering basket and cook for 10 min./100°C/speed 1. After 10 minutes, place the broccoli florets in the Varoma container, attach and cook for another 5 min./Varoma/speed 1.

Layer and bake casserole

Preheat oven to 180 degrees top and bottom heat. Place the pre-cooked potatoes and broccoli in a casserole dish and mix with the sauce from the mixing bowl. Sprinkle everything with 100 g of grated cheese (e.g. Emmentaler or Gouda) and bake in the oven for 30 minutes.
