Description

This zucchini lasagna is a vegetarian main course that is ideal for summer. It is gluten-free and offers a delicious alternative to classic lasagna. With a preparation time of about an hour, it is perfect for a festive dinner or a cozy lunch with friends and family. The lasagna is rich in vegetables and offers a hearty, warm meal.

  • 500 g Zucchini
  • 200 g Onion
  • 2 Stück Garlic cloves
  • 200 g Carrots
  • 100 g Celery stalk
  • 20 g Tomato paste
  • 500 g Passata
  • 1 TL Salt
  • 0.5 TL Pepper
  • 1 TL Oregano
  • 0.5 TL Thyme
  • 0.5 TL Rosemary
  • 40 g Olive oil
  • 50 g Butter
  • 50 g Flour
  • 500 ml Milk
  • 0.5 TL Salt
  • 0.25 TL Nutmeg
  • 150 g Grated cheese

Preparation (10 steps)

Chop onion and garlic

Place 200g onion in the mixing bowl and chop for 3 sec./speed 5. Then add 2 garlic cloves and chop for 3 sec./speed 7.

Sauté onion and garlic

Add 40g olive oil to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and chop vegetables

Place 500g zucchini, 200g carrots and 100g celery stalk in coarse pieces in the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula and repeat the process.

Add tomato paste and passata

Add 20g tomato paste and 500g passata to the vegetables in the mixing bowl and simmer for 10 min./100°C/speed 1.

Season

Add 1 tsp salt, 1/2 tsp pepper, 1 tsp oregano, 1/2 tsp thyme and 1/2 tsp rosemary to the sauce in the mixing bowl and mix for 5 sec./speed 3. Then season the sauce with salt and pepper.

Prepare béchamel

Put 50g butter in the mixing bowl and melt for 2 min./50°C/speed 1.

Make a roux

Add 50g flour to the melted butter in the mixing bowl and sauté for 3 min./100°C/speed 1.

Finish béchamel

Add 500ml milk, 1/2 tsp salt, 1/4 tsp nutmeg to the roux in the mixing bowl and cook for 8 min./90°C/speed 3. Then season the béchamel with salt and nutmeg.

Layer lasagna

Place a layer of zucchini slices, a layer of tomato sauce and a layer of béchamel in a baking dish. Sprinkle with grated cheese. Repeat this process until all the ingredients are used up. The last layer should be béchamel and sprinkled with cheese.

Bake lasagna

Bake the lasagna in a preheated oven at 180°C top/bottom heat for about 30 minutes until the cheese is golden brown.
