Description

This hearty beef stew is a Hungarian classic that warms you up, especially during the cold season. The secret lies in the interaction of tender beef, spicy peppers and aromatic red wine. I like to make it when I have guests, because it can be prepared well in advance and tastes almost even better when reheated. The potatoes make the stew nice and filling. Served with fresh bread and a full-bodied red wine, it is a real feast. A dash of vinegar at the end brings out the flavors even better. If you like it spicier, you can add a pinch of chili.

Ingredients (9 ingredients)

  • 1 kg Beef pot roast
  • 1 kg Onions
  • 2 clove Garlic
  • 3 tbsp Hot paprika powder
  • 3 tbsp Sweet paprika powder
  • 200 g Bacon fat (Green bacon)
  • 1 l Meat broth
  • 0.7 l Red wine
  • 0.5 kg Potatoes

Preparation (9 steps)

Render bacon

Render 200 g of bacon fat in cubes in a pan and then remove the rendered fat. The bacon itself is not used further.

Sear the meat

Cut 1 kg of beef pot roast into approx. 2 cm cubes and sear in the rendered bacon fat in the pan. Remove the meat from the pan and set aside.

Chop onions

Put 1 kg of peeled onions into the mixing bowl and chop for 3 sec./level 5. Use the spatula to scrape down from the edge.

Sauté onions

Add the seared meat cubes to the onions in the mixing bowl and sauté for 5 min./120°C/level 1.

Add garlic

Peel 2 cloves of garlic and add to the mixing bowl unchopped.

Add and sauté paprika

Thermomix® Setting
1 min/212°F/Speed 1 100

Add 3 tbsp hot paprika powder and 3 tbsp sweet paprika powder to the mixing bowl and sauté while stirring for 1 min./100°C/level 1.

Add potatoes

Peel 500 g of potatoes, cut into approx. 1 cm cubes and add to the mixing bowl. Mix everything well.

Fill with liquid and simmer

60 min/212°F/Speed 1 100 Reverse

Add 1 liter of meat broth and 0.7 liters of red wine to the mixing bowl. Simmer for 60 min./100°C/level 1 reverse rotation.

30 min/212°F/Speed 1 100 Reverse

Season the goulash with salt and freshly ground pepper and simmer for another 30 min./100°C/level 1 reverse rotation until the meat is soft and the liquid has reduced.
