Description

These mulled wine cranberry slices are a dream for the cold season! I make them every year for Christmas, and they are always a hit. The moist dough with the delicate cinnamon aroma harmonizes perfectly with the fruity cranberry filling and the light mulled wine glaze. Preparation with the Thermomix® is very easy, and the cake can be wonderfully prepared in advance. An absolute must for anyone who likes it Christmassy and fruity! Perfect for the coffee table or as a sweet surprise for friends and family.

Ingredients (17 ingredients)

  • 60 g Ginger in syrup
  • 250 g Butter or margarine
  • 350 g Sugar
  • 4 EL Sugar
  • 1 Pck. Vanilla sugar
  • 1 Prise Salt
  • 3 TL Cinnamon
  • 6 Stücke Eggs (size M)
  • 300 g Flour
  • 75 g Cornstarch
  • 2 TL Baking powder
  • 200 g Sour cream
  • 400 g Whipping cream
  • 2 Pck. Cream stabilizer
  • 3 Päckchen Cake glaze
  • 500 ml Mulled wine
  • 400 g Wild cranberries

Preparation (11 steps)

Chop ginger

Thermomix® Setting
5 sec/Speed 5

Place 60 g of ginger in syrup in the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Prepare dough

3 min/99°F/Speed 3 37

Place 250 g butter or margarine, 350 g sugar, 1 packet of vanilla sugar, 1 pinch of salt and 3 tsp cinnamon in the mixing bowl and mix for 3 min./37°C/speed 3.

Add eggs

Thermomix® Setting
20 sec/Speed 4

Add 6 eggs (size M) and mix for 20 sec./speed 4.

Add flour mixture

Thermomix® Setting
2 min/Kneading speed

Add 300 g flour, 75 g cornstarch and 2 tsp baking powder and knead for 2 min./kneading setting to form a dough.

Stir in sour cream

Thermomix® Setting
15 sec/Speed 3

Add 200 g sour cream and stir in for 15 sec./speed 3.

Fold in ginger

Fold the chopped ginger into the dough with a spatula.

Baking

Place the dough on a baking sheet lined with baking paper and bake in a preheated oven at 180°C top/bottom heat for approx. 25 minutes. Let cool after baking.

Whip cream

Thermomix® Setting
2 min/Speed 3,5

Put 400 g whipping cream and 2 packets of cream stabilizer into the mixing bowl. Whip with the butterfly for 2 min./speed 3.5 until stiff. Observe the consistency.

Spread cream

Spread the cream evenly on the cooled cake.

Prepare mulled wine glaze

Thermomix® Setting
7 min/212°F/Speed 2 100

Place 3 packets of cake glaze and 4 tbsp sugar in the mixing bowl. Add 500 ml mulled wine and bring to the boil for 7 min./100°C/speed 2.

Distribute cranberries and glaze

Spread 400 g wild cranberries on the cream. Pour the hot mulled wine glaze over it and let it set.
