Description

This one-pot chicken and couscous dish is a flavorful and easy meal to prepare. The chicken thighs are cooked until tender with aromatic spices, onions, garlic, and olives, creating a rich and savory sauce. The couscous absorbs all the delicious flavors, making it a satisfying and complete meal. I love to add a generous squeeze of lemon juice and fresh parsley for a bright and fresh finish. It's perfect for a weeknight dinner or a casual gathering with friends. This recipe is also great for meal prepping, as it reheats well and tastes even better the next day!

Ingredients (11 ingredients)

  • 8 piece skin on, bone-in chicken thighs
  • 2 tsp turmeric
  • 1 tbsp garam masala
  • 2 tbsp sunflower oil
  • 2 piece onions
  • 3 clove garlic cloves
  • 500 ml chicken stock
  • 1 large handful whole green olives
  • 1 piece lemon
  • 250 g couscous
  • 1 small bunch flat-leaf parsley

Preparation (7 steps)

Prepare Chicken Thighs

In a bowl, toss the 8 skin-on, bone-in chicken thighs with 1 tsp turmeric, 0.5 tbsp garam masala, and a pinch of salt until completely coated. Set aside.

Sauté Onions and Garlic

Add 2 onions, quartered, and 3 garlic cloves to the mixing bowl and chop for 3 Sec./Stufe 5. Add 2 tbsp sunflower oil and sauté for 3 Min./120°C/Stufe 1.

Add Spices and Chicken Stock

Thermomix® Setting
1 min/248°F/Speed 1 120

Add 1 tsp turmeric and 0.5 tbsp garam masala to the mixing bowl and cook for 1 Min./120°C/Stufe 1. Pour in 500ml chicken stock and scatter in a large handful of whole green olives.

Cook Chicken in Stock

Thermomix® Setting
35 min/212°F/Speed 1/Linkslauf 100 Reverse

Place the chicken thighs in the mixing bowl, skin-side up. Cook for 35 Min./100°C/Stufe 1/Linkslauf.

Remove Chicken and Add Couscous

Carefully remove the chicken thighs from the mixing bowl and set aside. Add the zest and juice of 1 lemon and 250g couscous to the mixing bowl. Stir to combine.

Cook Couscous

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

Cook for 5 Min./100°C/Stufe 1/Linkslauf.

Finish and Serve

Fluff the couscous with half of a small bunch of flat-leaf parsley, chopped. Place the chicken thighs on top of the couscous. Scatter with the remaining parsley and lemon zest before serving.
