Description

This Thermomix® recipe for duck leg with honey-orange glaze is a hearty main course featuring duck legs, honey, and rosemary.   • 4 Stück Duck legs
  • Oil
  • Salt
  • Pepper
  • Tonka bean
  • Fresh rosemary
  • 2 EL Blossom honey
  • 500 ml Poultry stock
  • 3 Stück Organic oranges

Preparation (10 steps)

Prepare duck legs

Sear the duck legs in a pan with a little oil. Then season with salt, pepper, and some grated tonka bean. The duck legs are now braised in the oven. This step is NOT done in the Thermomix.

Chop rosemary

Place fresh rosemary in the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula.

Add honey and mix

Thermomix® Setting
10 sec/Speed 3

Add 2 tbsp of honey to the chopped rosemary in the mixing bowl and stir for 10 sec./speed 3.

Glaze duck legs

Shortly before the end of the cooking time, brush the legs with the honey-rosemary mixture and let them caramelize. This step is NOT done in the Thermomix.

Prepare poultry stock

Remove the meat from the pan. Add 500 ml of poultry stock to the still hot pan. This step is NOT done in the Thermomix.

Add orange juice

Squeeze the juice of 2 oranges and add to the mixing bowl.

Simmer the sauce

15 min/212°F/Speed 2 100

Add the poultry stock and orange juice to the mixing bowl and simmer for 15 min./100°C/speed 2 without the measuring cup until the sauce is creamy.

Prepare orange zest and fillets

Zest the remaining orange and then fillet the orange. This step is NOT done in the Thermomix.

Refine the sauce

Thermomix® Setting
5 sec/Linkslauf/Speed 1 Reverse

Add the orange zest and orange fillets to the sauce in the mixing bowl and stir in for 5 sec./reverse/speed 1.

Serve

Serve the duck legs with the sauce. This step is NOT done in the Thermomix.
