Description

These marinated spare ribs are a hearty main course that can be prepared both in the oven and on the grill. The marinade is prepared in the Thermomix® and gives the spare ribs an intense aroma. With a preparation time of 4 hours (including cooking time) and 4 servings, this recipe is ideal for a cozy meal with friends or family.

Ingredients (16 ingredients)

  • 2.5 kg Spare ribs
  • 1 Tasse Tomato ketchup
  • 0.5 Tasse Honey
  • 0.5 Tasse/n Apple juice
  • 2 EL Sugar, brown
  • 1.5 TL Ginger powder
  • 2 Onion(s)
  • 3 Garlic clove(s)
  • 3 Spritzer Tabasco
  • 2 EL Worcestershire sauce
  • 5 EL Soy sauce
  • 2 TL Mustard, medium-hot
  • 0.5 TL Paprika powder, mild
  • 2 TL Pepper, black
  • Salt
  • 5 EL Red wine

Preparation (6 steps)

Chop onions and garlic

Add 2 diced onions and 3 cloves of garlic to the mixing bowl and chop for 3 seconds/speed 5. Scrape down with the spatula.

Prepare marinade

Thermomix® Setting

Add 1 cup tomato ketchup, 0.5 cup honey, 0.5 cup apple juice, 2 tbsp brown sugar, 1.5 tsp ginger powder, 3 dashes Tabasco, 2 tbsp Worcestershire sauce, 5 tbsp soy sauce, 2 tsp medium-hot mustard, 0.5 tsp mild paprika powder, 2 tsp black pepper, salt and 5 tbsp red wine to the mixing bowl and simmer for 15 min./100°C/speed 2 without the measuring cup.

Prepare spare ribs

Wash and dry the spare ribs. On the underside of the bones there is usually a thin skin that can be easily loosened and peeled off with the tip of a knife once you have found the beginning. Then divide the spare ribs into portions of 3 - 4 bones each.

Marinate and pack spare ribs

Spread out large pieces of aluminum foil and place a portion of spare ribs on each and brush thickly with the marinade on both sides. Then pack in aluminum foil. If there is any marinade left over when all the spare ribs are packed, set aside.

Cook spare ribs

Place the wrapped spare ribs on a baking sheet, but make sure that the spare ribs are placed with the bone side (underside) facing down so that the fat can migrate through the meat. Cook in the oven at 150 °C top/bottom heat for 2.5 to 3 hours. Then take them out and let them rest for about 10 minutes.

Grill spare ribs

Unpack the spare ribs and place them on the grill. If there is any marinade left, brush it on. And grill until nicely crispy brown. Alternatively, the spare ribs can also be grilled unpacked in the oven.
